Paneer Recipe / Cottage Cheese / பன்னீர்

Ingredients:

  • Milk- 1/2 Gallon
  • Lemon Juice - 4 tsp
  • Crushed Pepper corns ( Optional )

Paneer Recipe / Cottage Cheese / பன்னீர்
Procedure:

Bring the milk to boil.


Add 4 tsp of lemon juice and give a continuous stir till the whey gets separated.


The milk will be curdled now .


Filter the whey using a muslin cloth .


Tap the muslin cloth  to become flat, with the whey inside it.
Place a heavy bottom pan with water on top of the  flattened muslin cloth.


Set aside for an hour.
Remove the fresh paneer from Muslin cloth and cut it in to small cubes using a knife.


Add the crushed pepper corns if u are using it . This is a purely optional step .


Transfer the cut pieces in to a zip lock bag and freeze it.



Use this paneer to make,  Paneer Paratha  Mutter Paneer and Paneer Butter Masala ,

    Would I have to change any amounts if I used skim milk or whole milk?

    1. Hi Katie ,

      I have tried making paneer cubes earlier using skim milk but unfortunately it did not work out . There was more water and no panner at all .

      I have even tried the same with fat free milk as well and the result was same as made with skim milk . There was no paneer formed at all .

      I would suggest using whole milk or 2 % reduced fat , or 1% reduced fat milk for making paneer . The best paneer cubes are made with whole milk .
