KOTHAVARANGAI PORIYAL | CLUSTER BEAN STIR FRY WITH COCONUT

Kothavarangai Poriyal is an easy dish made with cluster Bean ( Kothavarangai ) and stir fry using coconut .  Cluster Bean looks similar to the normal green Bean . This Stir Fry goes well with Steamed Rice , Sambar and Rasam Recipes . So now off to today;s post Kothavarangai Poriyal ( Cluster Bean Stir Fry ) .

Kothavarangai Poriyal , cluster Bean Stir fry with Coconut
KOTHAVARANGAI PORIYAL | CLUSTER BEAN STIR FRY WITH COCONUT


Ingredients:

  • Kothavarangai ( Cluster Bean ) - 250 Grams , Chopped
  • Onion - 1 number , Chopped
  • Oil - 1 teaspoon
  • Mustardseeds - 1 teaspoon
  • Urad Dhal - 1 teaspoon
  • Red Chillis - 2 numbers 
  • Salt - To taste 
To Grind :
  • Roasted Chana Dal ( Daliya / Udachakadalai ) - 1 tablespoon
  • Grated Coconut - 1 tablespoon

    Cluster Bean Stir Fry using Coconut
    Cluster Bean Fry Recipe

     Method :

    • Grind together the coconut and Roased Channa Dal . Set aside .

    • Heat oil in a kadai or Wok , add the mustard seeds and allow it to pop . Add the urad dhal and fry for few seconds . Throw the whole red chillies and saute them . Now add the onion and cook till it  .becomes translucent .  
    • Now add the Chopped Cluster bean and fry for few seconds . Add  little water , salt and cook till the bean become soft .

    • Once the bean is well cooked , Add the ground channa dal  and coconut powder and give a toss . Switch off the stove .


    • Done !


    • Yummy Kothavarangai Poriyal is ready to Serve .

    PUMPKIN MUFFINS RECIPE | PUMPKIN RECIPES

    Pumpkin muffins are soft moist muffins made with PUMPKIN PUREE , flour and other few ingredients . These are delicious and very healthy too . I found this recipe as a good way to feed pumpkin to my kids as they are picky eaters . Check out the Other Muffins in my blog below .

    PUMPKIN MUFFINS RECIPE  | PUMPKIN RECIPES


    Ingredients:

    • Pumpkin Puree - 1 1/2 cup ( Click here for the Recipe )
    • All Purpose Flour - 1 1/2 cup
    • Butter - 1 stick , Melted
    • Sugar - 3/4 Cup
    • Baking powder - 1 tea spoon
    • Baking Soda - 1 1/2 tea spoon
    • Egg - 2 numbers
    • Vanilla Extract - 1 tea spoon
    • Raisins - Few ( Optional )

        Pumpkin Muffins Recipe
        PUMPKIN MUFFINS RECIPE  | PUMPKIN RECIPES

        Method :

        Take Some Pumpkin Puree . 

        Pumpkin Puree made in pressure cooker method

         Melt the butter and set aside .


        Beat the two eggs and set aside .


        In a bowl , mix all purpose flour , salt  sugar , baking soda , baking powder and whisk . Make a dent in the middle .


        Add the beaten eggs , melted butter , pureed pumpkin , vanilla Extract and gently fold the wet ingredients to the dry ingredients using a spatula .


        Mix the contents using a spatula .


        Add Some raisins  and fold them .


        Take the muffin Liner and line with the muffin paper , and fill the muffin cups with batter .


        Bake for 15 - 20 minutes and Allow them to cool down , then Serve .


        Yummy Pumpkin Muffins are ready to serve !

        Notes :

        • Butter Could be replaced by Oil or Margraine 
        • Pumpkin Puree could be made at home or bought from Store .

        STRAWBERRY GRANITA | STRAWBERRY RECIPES

        Strawberry Granita is a semi frozen dessert made with Sugar , water and strawberry .  I made this dessert this summer when we had excess of strawberries at our home . My kids absolutely loved this .  This recipe is best served during summer to beat the excess heat . Off to Today's Post Strawberry Granita Recipe .

        Ingredients:

        • Strawberry - 10 numbers
        • Water - 1/4 cup
        • Sugar - To Taste ( I added 2 tablespoon )

        Off to Today's Post Strawberry Granita .

        Strawberry granita Recipe
        STRAWBERRY GRANITA | STRAWBERRY RECIPES  

         

        Method:

        Mix together water and Sugar in a bowl . Mix well that the sugar is completely dissolved .

         

         Take the Chopped strawberries in a blender and puree them .


         Transfer the pureed Strawberries to the sugar water .


        Mix well .


        Transfer this mixture  to a stainless steel or a hard bowl  .


        Freeze the contents . Once it is half set , Remove from freezer and  Start scraping  it using a fork .


        After it is scrapped , Put the contents back in freezer  and allow it to be well set . Let it freeze overnight . When it is ready to use  start scrapping using a fork.


        Done ! Delicious Strawberry Granita is ready to serve .

        • One Or Two Teaspoons of Lemon Juice could be added if needed .

        ONION CHUTNEY RECIPE | CHUTNEY RECIPES



        Ingredients:

        • Onions - 3 numbers , Sliced
        • Red Chillis - 6 numbers
        • Urad Dhal - 1 tablespoon
        • Garlic - 4 pods
        • Ginger - 2' inch piece , chopped
        • Tamarind - Small lemon size 
        • Salt - To taste 
        • Oil - 1 tea spoon

        Tempering:

        • Oil - 2  teaspoon
        • Mustard seeds - 1 teaspoon


        Method:

         Take a heavy bottom pan , add oil , Add the urad dhal , red chilli , xhopped ginger and garlic pods and fry for few seconds .


        Now add the chopped onions , and Tamarind . Cook till the onion become soft .


        Allow the contents to cool down . Transfer this to a blender . Add salt .


        Grind them to a paste by sprinkling little water . Now the last part is tempering . Heat oil in a pan , add the mustard seeds and allow it to splutter . Transfer the ground paste from the mixer to the pan . 



        Cook till the oil separates from the chutney  . 


        Yummy Onion chutney is ready to serve .

        Serve this With Idly and Dosa recipes .

        POTATO COCONUT CURRY | POTATO KULAMBU RECIPE

        My kids are big fans of potatoes . We cook Potato at least once a week . This is a simple curry made with Potatoes cooked in coconut milk . Check out my other Potato recipes in my blog Potato Masala , Yellow Potato Curry , Spinach Potato Curry , Potato Podimas , and Mutton Potato Curry   . Off to Today's Post Potato Coconut Curry Recipe .

        Potato Coconut Curry Recipe or Potato Kulambu recipe
        POTATO COCONUT CURRY | POTATO KULAMBU RECIPE


        Ingredients:

        • Potato - 3 numbers , Skin removed and Diced in to big cubes  .
        • Onion - 2 numbers , Sliced
        • Green Chilli - 3 mumbers
        • Tomato - 1 number , Diced
        • Curry Powder - 2 teaspoon  ( Click here for the recipe )
        • Turmeric powder - 1/4 teaspoon
        • Salt - to taste
        • Oil - 1 tea spoon
        • Cilantro leaves - Few , chopped

        To Grind:

        • Coconut - 1 cup , Grated
        • Cumin seeds - 1 tea spoon 

          Method :


          Grind together coconut and cumin seeds with water in to a paste . Set aside . Heat oil in a heavy bottom pan . Add the Onions and Green Chilli and cook till the onion become translucent . 



          Now add the tomatoes and cook till they become soft . Add the Curry powder , Turmeric powder and salt . Mix well


          Add the diced potatoes and give a stir . Now add some water and bring the contents to a boil .


          Now add the ground coconut paste to the potatoes . Throw in the cilantro leaves . Add generous amount of water to a desired consistency and bring the contents to a vigorous boil  .


          Cover with the lid and cook till the potatoes become soft and cook in medium flame till the oil seperates out from the Potato Coconut  curry .


          Yummy Potato Coconut Curry is ready to serve .


          This Curry could be served with Steamed Rice , Idly , Dosa , Parathas .

          Note :

          • Red Chilli Powder and Coriander powder in a ratio 1:1 that is one tea spoon of red chilli powder and one tea spoon of coriander powder  could be substituted for Curry Powder  .

          VENDAKKAI PULI KULAMBU | OKRA CURRY RECIPE

          The Southern Part of India is famous for "Puli Kulambu " or Kara Kulambu . This Puli Kulambu is made using any vegetable as our choice and cooked in Tamarind juice and tempered with aromatic spices . Check out the Katharika Puli Kulambu recipe , The Indian Eggplant curry  here .           Vendakkai Puli Kulambu , An Indian Okra Curry recipe
          VENDAKKAI PULI KULAMBU | OKRA CURRY RECIPE



          Ingredients:

          • Oil - 1 teaspoon
          • Mustard seeds - 1 teaspoon
          • Urad dhal - 1/2 teaspoon
          • Methi seeds - 1/2 tea spoon
          • Garlic pods - 2 numbers , crushed 
          • Onion - 1 number , chopped
          • Tomato - 1 number , chopped
          • Okra ( Vendakkai , Lady's finger ) - 10 numbers , chopped in to medium size pieces .
          • Tamarind juice - 1/2 cup
          • Curry Powder - 1 teaspoon ( Click here for the recipe )
          • Turmeric powder - 1/4 teaspoon
          • Salt - To taste 

            Method :


            Heat oil in a shallow pan , add the mustard seeds allow it to pop and add methi seeds , urad dhal and crushed Garlic . Cook till raw smell goes away .

             

            Now add the chopped onions and Tomatoes and cook till they become soft .


            Add the Chopped Okra , Curry powder , Turmeric powder and salt . Mix well . Now add the tamarind juice and bring the contents to a boil .



            Cook till the oil separates out from the gravy and the Puli Kulambu ( Curry ) gets thick .


            Vendakki Puli Kulambu ( Okra Curry )  is ready to serve . Serve hot with Steamed Rice
