Homemade Ginger Garlic Paste

The Ginger Garlic paste is one of the important ingredient in my kitchen . Most of the Indian cooking require this ginger garlic paste . Initially i used to buy this paste from grocery store , but not anymore . Homemade paste is more flavorful and aromatic compared to the ones sold in market ,as this is made with out any preservatives , so why not go ahead and make it rather than buying it .

Homemade Ginger Garlic Paste

Ingredients:

  • Ginger - 250 gms
  • Garlic - 250 gms
  • Salt - 2 tsp
  • Oil - 3 tsp


Homemade Ginger Garlic Paste
Method: 

Take ginger and Garlic in 1:1 ratio .



Peel the garlic skin and also peel the skin from ginger and dice it . Transfer them to the food processor or a mixer and pulse it once . Now add the salt and oil and puree them to a paste . Add water if needed .



Take a clean jar , and transfer them to an airtight container and refrigerate it . I divided my paste in to two and freezed another jar and refrigerated the other jar .



Use the paste as needed to use in the curry or Rice varieties .

Paneer Korma / Paneer Kurma - No Onion , Tomato , coconut method

This Korma is made with out coconut  . Its very easy and a quick recipe . This is adapted from sanjeev Kapoor recipe . Off to the recipe now .

Paneer Korma / Paneer Kurma

Ingredients:

  • Paneer -  250 gms , cut in to cubes 
  • Yogurt - 1 cup , beaten
  • Ginger Garlic paste - 2 tsp
  • Green chilli paste - 1 tsp
  • All purpose flour - 2 tsp
  • Turmeric powder - 1/2 tsp
  • Water - 1 cup
  • salt - to taste
  • Garam Masala powder - 1 tsp

Tempering:

  • Oil - 1 tsp
  • Cloves - 2 no
  • Pepper corn - 1 tsp
  • Cinnamon stick - 1 no 
  • Star Aniseed - 1 no
Method:

Take the yogurt in a bowl , add the turmeric powder , All purpose flour , green chilli paste , ginger garlic paste , salt .



Add water and mix well . Set aside . Fry the paneer cubes and set aside .



In a heavy bottom pan , add oil and add the cinnamon stick , cloves , star aniseed , pepper corn  and fry for few seconds . It gives out a nice aroma .


Add the mixed yogurt to it .



Bring it to a boil . Now add the paneer cubes and garam masala powder .



Mix well .




    This goes well with naan .

    Bread Cups Recipe

    This is a quickest snack that could be made with bread . Its very simple and easy made with just 4 ingredients  . All kids love the word PIZZA . This is a version of pizza that is made with bread , tomato , onion and some cheese .It taste so good and filling .

    Bread Pizza Cups


    Ingredients:

    Bread - 6 - 7 slices 
    Onion - 1 no , chopped
    Tomato - 1 no , chopped
    Cheese - Few , Grated

      Method:

      Preheat the oven to 350 F .Take a bread cut the edges of the bread ( the brown part ) . Take a circle and a  Semicircle cutter , cut the bread to semicircle and circle shapes .  ( Use the waste bread and make bread crumbs , so that it is not wasted )


      Take a muffin tray , spray some oil in the cups of the tray and start lining the cups with bread pieces . I used 2 semicircle pieces on the edges  and one circle piece in the middle  for one cup of tray  . Similarly line all the cups .


      For filling add the onion , tomato and top it up with grated cheese .


      Bake it at 350 F for 7 - 9 minutes or till the base of the bread becomes crisp .


      Serve warm . My kids enjoyed this snack .

      Peas Fry / Peas Sundal / பட்டாணி சுண்டல்

      Peas Sundal ( Peas fry ) is a very popular street food sold in the beaches in Chennai . We never fail to have this sundal whenever we go to beach . This sundal is made with boiled peas and tempered with spices ,grated coconut and raw mango . Off to the recipe .

      Peas Fry / Peas Sundal / பட்டாணி சுண்டல்


      Ingredients:

      • Green peas - 1 cup ( Boiled ) 
      • salt - to taste

      Tempering:

      • Oil - 2 tsp
      • Mustard seeds - 1 tsp
      • Urad dhal - 1 tsp
      • Onion - 1 no
      • Hing - 1 pinch
      • Red chilli - 1 no , slit
      • Green chilli - 1 no , slit
      • Raw mango - Grated , Few ( Optional ) , I skipped this ingredient as i did not have it .
      • Grated Coconut - As needed


      Thengai Mangai Pattani Sundal

      Method:

      Heat oil in a shallow pan . Add the mustard seeds and allow it to pop. Now add the urad dhal and fry till brown in color . Add the green chilli and slit red chilli and stir .


      Add the onions , Turmeric powder , hing and cook till the onions become translucent .



      Add the boiled peas , salt  and cook for few minutes . Now add the grated coconut and grated raw mango and stir .




        Serve hot .


        Enjoy this protein packed sundal with a cup of Tea .

        Chickpeas Wrap

        This is a very easy lunch box recipe for my daughter on a lazy morning , if there is tortilla and chickpea at home . It is simple and easy recipe to make in a hurry and very healthy too . This is one of my daughter's favorite food too .This is a Low fat and Vegan Recipe

        Chickpea Wrap


        Ingredients:


        For the Filling:

        • Boiled Chickpea - 1 can ( Aprox 437 Gm ) OR [ Soak the chick peas over night and cook it till soft ]
        • Bell pepper - 1 no , Diced
        • Tomato - 1 no , Diced
        • Onion - 1 no , sliced
        • Red chilli powder - 1 tsp
        • Ginger Garlic Paste - 1 tsp
        • Oil - 1 tsp
        •  Salt - to taste

        Chickpeas Wrap


        Method:

        In a heavy pan add oil and fry the ginger garlic paste till the raw smell goes away . Add the diced tomato , onion , chilli powder and salt . Cook till the contents become soft .


        Now add the boiled Chickpea and bell peppers and fry for few more minutes till the mixture is blend well .


          Take a Tortilla , and place a tablespoon of the chickpeas masala in it .



          Add some lettuce .


          Wrap it up and pin the ends using a tooth prick .


          Slice it in to halves .


          Serve the wrap or pack it up for lunch .

          Banana Mango Muffins

          Banana Mango Muffins is a very easy and a simple recipe . When i was baking the Mango Banana Bread , I put few batter in the muffin tray and my daughter Akshita decorated with some jelly beans .The muffins were Super delicious . This recipe follows the steps as same as the Mango Banana Loaf Off to the recipe .

          Banana Mango Muffins




          Ingredients:
          •   All Purpose Flour / Maida - 1 1/2 cups
          •   Sugar - 3/4 cup  
          •   Baking powder - 1 tsp
          •   Baking soda - 1 1/2 tsp
          •   Salt - 1/4 tsp
          •   Unsalted butter - 1 stick ( Approx 1/2 cup when melted )
          •   Mashed Banana and Mango Puree - 1 1/2 cup ( I used 3    ripe   banana and 1/2 cup of mango puree )
          •   Eggs - 2 no
          •  Vanilla extract - 1/2 tsp
          • Nuts - Few ( optional )
          • Jelly Beans - optional

          Method:

          Preheat the oven to 350 F . In a  mixer  Puree the banana and Mango together . Set aside .


           Melt the butter and set aside .


          Beat the two eggs and set aside .


          In a bowl , mix all purpose flour , salt  sugar , baking soda , baking powder and whisk . Make a dent in the middle .


          Add the beaten eggs , melted butter , pureed mango and banana  , vanilla Extract and gently fold the wet ingredients to the dry ingredients using a spatula .



           Add the nuts and fold it again .


          Take the muffin Liner and line with the muffin paper , and fill the muffin cups with batter .


           My daughter decorated with some jelly beans , But this is purely optional . Bake for 15 - 20 minutes .  Insert a tooth prick to check if the muffin is fully baked ie the inserted tooth prick comes out clean .


           Allow them to cool down .



          Enjoy this muffin with a cup of chai .

          Gobi Manchurian | Gobi Manchurian Gravy - Low Fat Method

          Gobi Manchurian is my all time favorite recipe . I made this a low fat method by skipping the deep fried part and replacing it by tawa fry and making this dish a healthy one . This is a very easy and a simple recipe .

          Gobi Manchurian | Gobi Manchurian Gravy - Low Fat Method


          Ingredients:

          For Marinating :

          • Cauliflower - 1 flower , Cut to florets .
          • Ginger Garlic paste - 1 tsp
          • Paprika Powder - 1 tsp
          • Red Chilli Powder - 1 tsp
          • Corn Flour - 1 tsp
          • Lemon juice - 1/2 tsp
          • Salt - to taste
          For Making the Gravy :

          • Oil - 2 tsp
          • Garlic - 1 tbsp , Chopped
          • Onion - 1 no , Chopped
          • Red Chilli Sauce - 1 tsp
          • Tomato Ketchup - 1 tsp
          • Soy Sauce - 1 tsp
          • Ajinamotto - 1/2 tsp ( Optional )
          • Spring onion - Few , For garnishing .
          • Water - As required 
          • Salt - to taste

          Cauliflower Manchurian

          Method:

          In a shallow bowl , add the florets , chilli powder , paprika powder , salt , ginger garlic paste , corn flour , lime juice and mix well . Set aside for 30 minutes .


           In a heavy bottom pan , heat  some oil add the marinated florets and tawa fry them till they turn brown in color . Set aside  .


          Add the remaining oil , add the chopped garlic and fry till the raw smell goes away .


          Now add the onions and fry till they become translucent .


          Now add the red chilli sauce , Tomato ketchup and soy sauce , salt , Ajinamotto and mix .


          Add some  water and bring the contents to a boil .


          Now add the fried cauliflowet to it and mix .


          Cook for few minutes . Once the gravy starts to get thick , add the spring onions and turn off .


          Serve hot .


          Enjoy this recipe with fried rice
