GINGER PICKLE RECIPE | HOW TO MAKE INJI OORUGAI | PICKLE RECIPES

Ginger Pickle or Inji Oorugai Commonly called in South India is a delicious finger licking pickle that is hot , spicy , tangy and sweet . Pickle Or Oorugai is one of the common food available in all the south Indian Homes . So now off to today's post Inji Oorugai or Ginger Pickle Recipe .

  Ginger Pickle- Ingredients

Preparation Time :20 minutes  | Cooking Time : 15 minutes
Recipe Category: Condiments | Recipe Cuisine: South Indian
    • Ginger roots - 250 Grams
    • Oil - 2 tablespoon
    • Mustard seeds - 1 tea spoon
    • Methi Seeds ( Fenugreek Seeds ) - 1 teaspoon
    • Red Chilli Powder - 2 teaspoon
    • Tamarind Juice - 1/2 cup 
    • Salt - To taste
    • Hing - 1/4 teaspoon 
    • Jaggery ( Vellam ) - a lemon size piece

      Method :

      • Wash the ginger roots in water to remove any sand . Peel the skin of the ginger .


      • Grate the ginger . I used my Food processor to grate them .

      • In a wok , heat oil . Add the mustard seeds and allow them to pop . Now add the Methi seeds and fry for few seconds . Add some hing .


      •  Add the grated Ginger , Salt and Red chilli Powder .


      • Mix them well . Add the Tamarind juice .


      • Bring the contents to a boil . Add the piece of jagerry .


      • Cook till the oil separates out from the Ginger pickle .


      • Ginger Pickle or Inji Oorugai is done !


      • Yummy Tangy Spicy Ginger Pickle or Inji Oorugai is ready to serve .

      HASSELBACK POTATO RECIPE | HOW TO MAKE HASSELBACK POTATO | LOW FAT RECIPES

      Hasselback potato is a swedish dish . The hasselback potatoes are crisp outside and soft inside . The potatoes are seasoned with salt , pepper and few herbs and baked to perfection . So now off to today's post Hasselback potatoes recipe .

      Hasselback potato Recipe - Ingredients:

      Preparation Time : 15 minutes | Recipe Category: Snack
      Cooking Time : 40 minutes | Recipe Cuisine : Swedish
      • Potato - 3 to 4 numbers
      • Oil - 1 tablespoon
      • Salt - To taste
      • Rosemary - 1/2 teaspoon , Dried leaves
      • Crushed pepper corns - To taste , for seasoning

          Method :

          • Wash the potatoes . Pat them dry .


          • Place the potato on a wooden spatula and slice them in to tiny slices , with the slices connected at the bottom . 


          • Preheat the oven at 425 F . In a mixing bowl , add oil , salt and rosemary . Mix well . 


          • Brush the potatoes with the seasoning .


          • Line the baking pan with Aluminum foil . Arrange the seasoned potatoes .


          • Bake them for 40 minutes , till the potatoes become crisp outside . Add some crushed pepper corns to enhance the flavor . Hasselback potatoes are ready to serve .


          • Enjoy the hasselback potatoes . 
          Notes :
          • Instead of oil , Butter can be used . 
          • Grated Cheese could be added to enhance the flavor . 
          • Any of your favorite herbs can be added for seasoning .

          CELERY RICE RECIPE | HOW TO MAKE CELERY PULAO

          Celery is a low Calorie food . The stalks of celery are crunchy and can be served as a snack . This recipe Celery rice is a recipe made with celery , and few aromatic spices , and rice . This Celery has amazing health benefits and it is always advisable to include in our diet . So now off to today's post Celery Rice .

          Celery Rice Recipe - Ingredients :

          Preparation Time : 15 minutes | Recipe Category: Main Course
          Cooking Time : 15 minutes | Recipe Cuisine : Indian 
          • Celery - 1 cup , chopped
          • Oil - 1 tablespoon
          • Cinnamon stick - 1 stick
          • Cloves - 3 numbers
          • Basmathi Rice - 2 cups
          • Water - 3 cups
          • Turmeric powder - 1/4 teaspoon
          • Salt - To taste 
          To Grind :
          • Ginger - 1' piece , chopped
          • Garlic - 3 pods
          • Mint leaves - 3 to 4 leaves
          • Fennel seeds - 1 teaspoon
          • Celery leaves - Few leaves , chopped
          • Green Chilli - 2 numbers

            Method :

            • Chop the Celery stalks , Remove the leaf from the stalk and set aside . I added few mint leaves along with the chopped celery stalks .


            • Grind together Celery leaves , Mint leaves , ginger , garlic , fennel seeds and green chills in a mixer . Set aside .


            • Heat Oil in a  heavy bottom shallow pan . Fry the cinnamon stick and cloves . Now add the chopped Celery stalks and few mint leaves and fry for 2 minutes . 


            • Add the ground contents from mixer to the pan . Fry till the raw smell goes away .


            • Add the Turmeric powder and salt .


            • Add 3 cups of water and bring the contents to a boil .


            • Add rice .


            • Cover with the lid and pressure cook the contents for one hisses . Open the lid and Mix them well .


            • Done ! Yummy Celery Rice Or Celery pulao is ready .


            • Celery  Rice or Celery Pulao is ready to serve . Enjoy the Celery rice or Celery pulao with Raitha .
             Notes:
            • Green Chilli could be added directly with the celery stalks instead of grinding .
            • Few  drops of lime juice could be added to the rice to give a tangy taste .

            MUTTON KOLA URUNDAI | HOW TO MAKE MUTTON KHEEMA BALLS

            Mutton Kola Urundai Or Mutton Kheema Balls is a simple recipe that is most common in Tamil Nadu . The original Recipe calls for Minced Meat , but I did not have them so I used the regular Mutton Pieces to make the Mutton Kola Urundai Recipe . So not Off to Today's post Mutton Kheema balls or Mutton Kola Urundai .

            Mutton Kola Urundai - Ingredients 

            Preparation Time : 15 minutes | Recipe Category: Snacks
            Cooking Time : 10 minutes | Recipe Cuisine : South Indian

            • Mutton Pieces  - 150 Grams , Boneless and chopped
            • Green Chilli - 2 numbers
            • Ginger - 1' Small Piece , chopped
            • Garlic Pods - 2 pods
            • Mint leaves - Few of them ( 5 - 6 leaves )
            • Fennel Seeds - 1/2 tea spoon
            • Garam Masala Powder - 1/2 Teaspoon
            • Roasted Channa Dal - 1 tablespoon
            • Salt - To Taste
            • Oil - For Frying

              Method :

              • Take the Boneless Chopped Mutton pieces in a pressure cooker . Add 2 cups of water and some salt to taste . Pressure cook the contents for 10 minutes . Cook till the mutton pieces become soft . Filter the water from the Mutton Pieces and set aside .  


              • The Mutton stock can be used to make the Mutton Soup . Now take the Mutton pieces in a blender .  Add the green chillis , Garlic pods , chopped ginger and  Fennel seeds.


              • Pulse Them Well .  Now add the Roasted Channa dal , Mint leaves , salt and Garam Masala powder .

              • Pulse the contents again . 

              • Make the Balls using the blended contents .


              • Heat some oil in a shallow pan and fry these Kola Urundai ( Mutton Kheema Balls ) .


              • Fry the Kola Urundai or Mutton Kheema Balls till they become golden brown in color . 


              • Done ! Mutton Kola Urundai ( Mutton Kheema Balls ) is ready to serve .  My kids absoultely loved these Mutton Kola Urundai ( Mutton Kheema Balls )

              Peanut Masala ( Pakoda ) , Verkadalai Pakoda recipe is a crispy addictive snack recipe . Peanut Masala ( Pakoda ) is made by frying the peanuts ( Verkadali ) tossed with some flour . My kids absolutely loved this simple snack .This Peanut Masala ( Pakoda ) Or Verkadali Pakoda recipe could also be baked in oven .               Cooking Time : 10 minutes | Recipe Cuisine : Indian 
                • Peanuts ( Verkadalai ) - 1 cup
                • Gram Flour ,  (Besan ) - 1 cup
                • Rice Flour - 1 tablespoon
                • Red Chilli Powder - 1 tea spoon
                • Salt - To taste
                • Water - As needed for kneading
                • Oil - For Frying

                  Method :

                  • Take Some Peanuts ( Verkadalai ) in a shallow bowl .


                  • Add Some Gram Flour ( Besan flour ) to it .


                  • Now add Some Rice flour , Red chilli Powder , and salt .


                  • Sprinkle some water as needed  and marinate the Peanuts ( Verkadalai ) well . 


                  • Heat some Oil in the wok for frying . Drop the marinated Peanuts in hot oil . If the peanut are sticking to each other ,  just separate them using the spatula when they are getting fried in oil .


                  • Cook till the peanuts ( Verkadali ) become Golden brown in color . 


                  • Done !! Yummy Peanuts ( Verkadali Pakoda ) Masala is ready to serve . Enjoy these pakodas with some Juice or a Chai ( Tea ) in the evening .
