THAKKALI KUZHAMBU | EASY TOMATO CURRY

Thakkali Kulambu ( Kuzhambu ) is a simple and a quick curry that goes well with steamed Rice , Rotis or Idli dosa Recipes . This recipe calls for few ingredients . Thakkali Kulambu can be made in a jiffy . So off to todays Post Easy Tomato Curry Recipe .

Tomato Curry - Ingredients

Preparation Time : 10 minutes  | Cooking Time : 30 minutes
Recipe Cuisine:
South Indian  | Serves : 4 


  • Tomato ( Thakkali ) - 2 numbers
  • Onion - 1 number , Chopped
  • Oil - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Urad dhal - 1/2 teaspoon
  • Sambar  Powder or Curry Powder - 2 teaspoon  ( Click here for the recipe )
  • Turmeric Powder - 1 teaspoon
  • Salt - To taste

To Grind

  • Cumin seeds - 1/2 teaspoon
  • Coconut - 1/2 cup , chopped
  • Water - As needed

Method :


  • Take a heavy bottom pan and  fill with water , add the tomatoes . Bring them to a boil.


  •  Allow the tomato to cool down a bit . chop them roughly . Take the chopped pieces in a blender and puree them .


  • Take the chopped coconut slices , cumin seeds and some water in a blender .


  • Puree them and set aside .

  • Heat a heavy bottom vessel or a kadai . Add oil . Now add the mustard seeds and urad dhal and allow them to spultter . Now add the chopped Onion . Fry till they become translucent .


  • Add the curry Powder or Curry Powder ,  salt , Turmeric powder and mix .



  • Now add the pureed tomato and bring them to a boil  . Cook till the raw smell goes away .

  • Now add the ground coconut paste and bring them to a  boil .



  • Cook till the oil separates out from the curry .


  • Delicious Thakkali Kulambu is ready to serve .



Note :

  • Red Chilli Powder and Coriander powder in a ratio 1:1 that is one tea spoon of red chilli powder and one tea spoon of coriander powder  could be substituted for Curry Powder  .

PEPPER CHICKEN GRAVY | MILAGU KOZHI KULAMBU | HOW TO MAKE PEPPER CHICKEN GRAVY

Welcome 2015 . Happy New year dear Readers of this blog . Coming to today's recipe Pepper chicken gravy also called Milagu Kozhi Kulambu is a great recipe for treating common cold . This recipe calls for very few ingredients and can be made in a jiffy . This recipe pairs well with steamed rice and rotis . So now off to today' s post Pepper chicken gravy or Mlagu Kozhi Kulmbu .

Pepper chicken gravy - Ingredients

Preparation Time :10 minutes  | Cooking Time : 20 minutes
Recipe Category:

  • Chicken - 250 grams , cleaned and cut
  • Onion - 2 numbers , chopped
  • Cumin Powder - 1 tablespoon
  • Pepper Powder - 1 table spoon
  • Red chills - 5 numbers , broken 
  • Turmeric Powder - 1/2 teaspoon
  • Salt - to taste 
  • Water - As needed

    Method :

    • Clean and marinate the chicken with turmeric powder . Set aside for at least 30 minutes . This removes the smell from the chicken . ( This step is purely optional )

    How to clean chicken

    •  Heat oil in a Pressure cooker and add the chopped Onions and Broken chilli and cook till the onion become translucent .


    • Add the cleaned Chicken, cumin and pepper powder , Turmeric powder , salt .


    • Mix them well . Add some water around 1 1/2 cup of water and bring the contents to a boil . 


    • Cover with the lid and Pressure cook the contents to 2 hisses .


    • once the pressure in the cooker relieves . Remove the lid  . The chicken is cooked and Oil separates on the top.


    • Pepper Chicken Gravy or Milagu Kozhi is ready .

    Notes :
    • If you find the gravy to be too watery , bring the contents to a boil and let the water reduce its volume .
    • The Pepper powder can be adjusted to suit the spice level .

    SORAKKAI KOOTU | BOTTLE GOURD CURRY

    This is a simple and a quick curry made with Sorakkai AKA Bottle gourd with some authentic Indian ground masala and spices . Any squash could be used if you cant find a Bottle Gourd . This Sorakkai Kootu pairs well with Steamed Rice and roti recipes . So now off to Today's post Sorakkai Kootu or Bottle gourd Curry Recipe .

    SORAKKAI KOOTU | BOTTLE GOURD CURRY 

    Sorakai Kootu - Ingredients

    Preparation Time : 10 minutes  | Cooking Time : 30 minutes
    Recipe Cuisine:
    South Indian  | Serves : 4 

     

    • Channa dal - 1 cup
    • Sorakkai or Bottle gourd  - 1 number , Skin Out and Diced
    • Tomato -1 number ,  chopped
    • Onion -1 number ,  chopped
    • Hing -1 pinch
    • Curry Powder -1tablespoon ( Click here for the recipe )
    • Turmeric powder - 1 pinch
    • Water - As needed
    • Green Chilli - 1 number , Slit
    • Salt-to taste

    To Temper :

    • Oil - 1 teaspoon
    • Mustard seeds - 1/2 teaspoon
    • Urad dal - 1/2 teaspoon
    • Coriander leaves - Few , Chopped ( Optional ) 

    To Grind :

    • Coconut - 1/2 cup , grated
    • cumin seeds - 1 teaspoon
    • water - As needed


         

        SORAKKAI KOOTU | BOTTLE GOURD CURRY 

         

        Method :

        • Skin out the bottle gourd aka sorakkai and dice them in to cubes .


        • Take the grated coconut and cumin seeds in a blender . Grind them in to a paste  by adding water and set aside .


        • In a pressure cooker add the channa dal, tomato,onions,squash,turmeric powder , Curry powder ,and hing .

         

        • Add some water and mix .
         

        •  Cover with the lid and pressure cook the contents  for 2 hisses .
        • Now add the Ground Coconut and Cumin paste and bring the contents to a boil . 
        • In a pan add oil,  add the mustard seeds and allow it to pop ,add urad dal , and coriander leaves and allow it to sizzle .
         


        • Transfer the tempered contents to the pressure cooked contents , add salt and mix-well .
         

        • Done !


        • Yummy Sorakkai Kootu Or Bottle gourd curry is ready to be served . This Bottle gourd Curry or Sorakkai kootu could be served with Steamed Rice , Idly , Dosa , Parathas .

        Note :

        • Red Chilli Powder and Coriander powder in a ratio 1:1 that is one tea spoon of red chilli powder and one tea spoon of coriander powder  could be substituted for Curry Powder  .

        METHI MUTTER MALAI | PEAS FENUGREEK LEAVES CURRY

        Methi Mutter Malai is a simple subzi made with Peas ( Matar ) and methi cooked in a creamy rich sauce . This recipe pairs well with Naan and roti recipes . So now off to today's post Methi Mutter Malai recipe with step wise photos .

        Methi Mutter Malai - Ingredients 

        Preparation Time : 10 minutes  | Cooking Time : 30 minutes
        Recipe Cuisine: North Indian  | Serves : 4

        • Peas - 1 cup , ( Use Fresh or Frozen )
        • Methi Or Fenugreek leaves - 1/2 bunch leaves, ( Leaves removed from stem and chopped )
        • Turmeric Powder - 1/4 teaspoon
        • Garam Masala - 1/2 teaspoon
        • Butter - 1 tablespoon
        • Fresh cream - 1/4 cup ,  ( Click here for the recipe )
        • Cumin seeds - 1/2 teaspoon
        • Salt - to taste

        To Roast and Grind :

        • Green Chilli - 2 numbers , slit
        • Ginger Garlic Paste - 1 tablespoon   ( Click here for the recipe )
        • Onion - 1 number , Diced
        • Tomato - 1 number , slit 
        • Cashew - 5 -6 pieces 
        • oil - 1 teaspoon

          Method :

          • Heat a wok or a heavy bottom pan . Add oil . Add in the onions and cook till they become soft . Add the ginger garlic paste and fry till raw smell goes away . Add the tomatoes, green chilli and cook till the tomatoes become mushy . Allow them to cool down .


          • Transfer the contents to a blender . Add the cashew nuts .


          • Blend them in to a puree . set aside .

          • Melt Butter in a wok . Add the cumin seeds and allow them to crackle .


          • Add the peas and stir fry them for few seconds .


          • Add the methi leaves and mix .


          • Add the turmeric powder , Garam Masala Powder , salt and mix them well .


          • Transfer the ground contents from Blender to the contents and mix them well .


          • Bring the contents to a boil . 
          • Finally add some fresh cream to the gravy .


          • Once the fresh cream is added switch off the flame .Methi Mutter Malai is done !

          CHILLI PANEER RECIPE | CHILLI PANEER - GRAVY METHOD | PANEER RECIPES

          Paneer is the most loved ingredient of my kids. If i ask them your most favorite food they say any dishes made with paneer Eyes shut . I have a few collection of Paneer in my blog as well . Today's post is a fusion of Indian and Chinese cuisine  made with paneer . So now off to today's post Chilli Paneer Recipe - Gravy Type .

          Chilli Paneer - Ingredients

          Preparation Time :10 minutes  | Cooking Time : 30 minutes
          Recipe Category:
          Gravy  | Recipe Cuisine Indo-chinese

          • Capsicum | Bell Pepper - 1 number , Diced
          • Onion - 1 number , Diced
          • Crushed Garlic  - 1 tablespoon
          • Whole red chilli -  3Numbers , slit
          • Oil - 1 tablespoon
          • Crushed Pepper powder - 2 Teaspoon
          • Soy Sauce - 2 tea spoon
          • Cornflour - 1 tea spoon 
          • Salt - To taste
          • Lemon juice - 1/4 teaspoon
          • Green Chilli - 3 number slit 
          • Cornflour - 1 tea spoon
          • Water - As needed

          To Marinate:

          • Paneer - 200 grams , cubed (  Click here for the recipe )
          • Salt - to taste
          • Ginger garlic paste - 1 teaspoon ( Click here for the recipe)
          • Corn flour - 1 teaspoon

          For frying :

          • Oil - 2 teaspoon

          Method :

          • Take the corn flour in a small bowl , add some water to make a paste . Set aside .
          • Take the paneer cubes in a mixing bowl . Add the Ginger garlic paste , Cornflour , salt and mix the contents well . Sprinkle water if needed for the marination . Set aside for at least 30 minutes .


          • Heat oil in a non stick tava for frying the Paneer cubes . Fry them till they turn slight golden color . Remove and set aside .


          • Heat the remaining oil in a wok . Add the slit whole red chills and crushed garlic and fry till raw smell goes away .



          • Add in the diced onions and the green chills and cook them for few seconds .



          • Now add the diced Bell peppers and fry them for few seconds .



          • Add the crushed Pepper corns and salt . Mix them well .


            • Add the soya sauce and lemon juice and mix well .


            • Add some water and bring the contents to a boil .


            • Add the fried paneer cubes and the corn flour mixture to it . Mix well .


            • Chilli Paneer Gravy is ready to be served .
