 Dal Recipe /  Dhal Fry Recipe / Paruppu Masiyal / Lentil Curry
Lentil Curry



Ingredients:
  • Toor dhal - 1 cup
  • Hing - 1 pinch
  • Turmeric powder - 1 pinch
  • Tomato -1 no, chopped
  • Onion -1 no, chopped
  • Mustard seeds - 1/2 tsp
  • Urad dahl - 1/2 tsp
  • Cumin seeds -1 tsp
  • Whole red Chilli - 2 no
  • Oil - 2 tsp
  • Salt - to taste

Indian Dhal Recipe / Basic Dhal Fry Recipe / Paruppu Masiyal

Method:
In a pressure cooker add the washed toor dal, some water,turmeric powder,hing, chopped tomatoes, some onions,  pressure cook for 3 hisses .


Open the pressure Cooker , add salt and Mash them well .


In a kadai, add oil, add mustard seeds allow it to pop,add urad dal and fry till it turn brown , add the cumin seeds and allow it to splutter , and red chills and stir well.
Add the chopped onions and cook till the onions become soft.

Transfer these contents to pressure cooker and stir.


Serve hot with Steamed Rice .

Peerkangai Poriyal | Ridge gourd fry | பீர்கங்காய் பொறியல்

Poriyal is one of the main side dish which is served with steamed rice and curry . Check out all the  other the poriyal recipes by clicking here . Off to today's recipe .

Peerkangai Poriyal | Ridge gourd fry | பீர்கங்காய் பொறியல்

Ingredients:
  •  Peerkangai (Ridge gourd) - 1 no,Chopped
  • Onion -1 no ,chopped
  • Sambar powder - 1 tsp ( Red Chilli Powder Could also be used )
  • Turmeric powder - 1 pinch
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1 tsp
  • Oil - 2 tsp
  • Salt - to taste
  • Grated coconut - 2 tsp(optional)

Preparation:
In a kadai, heat oil add mustard seeds allow to pop , add urad dal and fry for few seconds .Now add onions and stir and cook till it becomes soft.


Add Chopped ridge gourd, turmeric powder , sambar powder, salt and allow it to cook till the vegetable becomes soft. As it is getting cooked the vegetable itself oozes out the water .


Add the grated coconut and stir.

Flavoured rice

Flavored rice

Ingredients:
Basmathi rice-2 cups(soaked in water for 30 min)
Ghee/Butter-2 tbsp
Cloves-2
Black cardamon-1
Cumin seeds-1 tsp
Pepper corns-1/2 tsp
Cinnamon stick-2
Onions- 1 chopped
Green chilli-2 slit
Chopped vegetables(carrot+Beans+Peas)-1 cup
Salt-to taste
Saffron-1 pinch

Preparation:
In a Pressure cooker add ghee/butter , Add cloves & Cinnamon and black cardamom, cumin seeds and pepper corns and stir.
Now add the onions and green chilli and cook till onions becomes soft.
Add the chopped vegetables ,salt and cook for 5 min.
Add 4 cups of water and bring it to boil.
Add the soaked basmathi rice and a pinch of saffron.
Pressure cook in cooker for 2 whistles.
Serve hot with raitha and pickle

VENDAKKAI PORIYAL | OKRA ( BHINDI ) STIR FRY RECIPE

Vendakki Poriyal is a easy and a simple stir fry made with Okra  and pepper powder . This recipe goes well with Steamed rice , Sambar or Vatha Kulambu  and Rasam Recipes .  So now off to Today' s post Vendakkai Poriyal .

Coming on to Today's Post Vendakkai Poriyal , Okra Pepper Fry Recipe

Ingredients:

  • Oil - 2 teaspoon
  • Mustard - 1/2 teaspoon
  • Urad dal - 1/2teaspoon
  • Red chili - 2 numbers 
  • Onions -1 number ,  chopped
  • Pepper powder - 1 teaspoon
  • Cumin Powder - 1 tea spoon 
  • Sal t -to taste
  • Okra - 250 grams , Washed and then Chopped in to small pieces

Method :

In a kadai , heat oil and allow the mustard to crackle, add urad dal ,onions and red chilis and cook till onions  becomes soft.


Add the chopped okra to the kadai and add salt and pepper powder , Cumin powder  and stir .


Fry until the slime  dries up . ( Do not add water to the okra while cooking ) . Cook in medium flame and cook till the okra become soft and dry roast the okra in low flame .


Yummy Vendakkai Poriyal is ready to serve.

Ingredients:
  • Avaraika - 250 gms ,Chopped
  • Onion -1 no ,  chopped
  • Red Chilli  powder - 1 tsp
  • Turmeric powder - 1 pinch
  • Mustard seeds - 1/2 tsp
  • Urad dal -1 tsp
  • Oil - 2 tsp
  • Salt - to taste
  • Grated coconut - 2 tsp(optional)


Preparation:
In a kadai, heat oil add mustard seedsand urad dal and temper .Now add onions and stir and cook till it becomes soft.



Add Chopped broad beans, turmeric, and chilli powder, salt .


 Sprinkle little water if required and allow it to cook till the vegetables becomes soft.


Add the grated coconut and stir .


Serve hot with Steamed Rice .

Kovakkai Poriyal | கோவைக்காய் வறுவல் | Tindora ( Gherkins ) Fry

Kovakkai ( Tindora ) Poriyal Recipe
Tindora Fry / Kovakkai Poriyal / Ivy Gourd Fry / கோவைக்காய் வறுவல்

Ingredients:
  • Kovaikkai / Tindora / Ivy gourd -1 cup ,Chopped
  • Onion -1 no , chopped
  • Red chilli powder - 1 tsp
  • Turmeric powder - 1 pinch
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1 tsp
  • Oil - 1 tbsp
  • Salt - to taste
Method:
In a kadai, heat oil.Add the mustard seeds and allow it to splutter.Add urad dal and stir for few seconds.
Now add the onions and cook till it becomes soft.


Add the chopped kovaikkai ( Tindora ) , salt, turmeric and Red chilli powder and sprinkle little water to make the kovaikkai cook well.

After it is cooked, turn the stove to medium flame and dry roast till it becomes brown in color.


Serve hot with Steamed rice and curry of your choice .

Pavakkai Poriyal | Bitter gourd fry | Karela Fry


Easy diabetic friendly recipe
Pavakkai Recipe | Bitter gourd fry | Pavakkai poriyal


Ingredients:

  • Bitter gourd - 3 numbers ,Chopped
  • Onion -  1 numbers , chopped
  • Oil- 2 table spoon
  • Mustard seeds - 1/4 tea spoon
  • Urad dal - 1/2 tea spoon
  • Salt - to taste
  • Sambar powder - 1 tea spoon ( Red Chilli Powder Can also be used )
  • Turmeric powder - 1 pinch
  • Curd - 1/4  cup, beaten  ( Click here for the recipe )

Method:

In a heavy bottom pan heat one table spoon  oil, add the mustard seeds and allow it to crackle.Now add urad dal and fry till it turns brown.Add the chopped onions and cook till it becomes soft.

Add the chopped bitter-gourd ( Pavakkai ) , salt, sambar powder,turmeric powder and beaten curd and  mix .


Mix well and allow it to cook till it becomes soft .



Now put it in medium flame and add one table spoon  of oil and allow it to get roasted in oil. Cook till it turns golden brown color .

Serve hot with rice after it turns brown in colour.

Sundakkai Vatha Kulambu | Sundakkai Recipes

Sundakkai Vatha Kulambu
Vathal kolumbu /  Turkey Berry Curry / Sudakkai Kulambu

Turkey berry / Sundakkai has amazing health benefits .It helps in controlling diabetics . 

Ingredients:

  • Turkey berry / Sundakkai - 1/4 cup
  • Onion -1 no , chopped
  • Tamarind juice - 1/2 cup
  • Sambhar powder - 2 tsp ( Red Chilli Powder could be used )
  • Turmeric powder - 1 pinch
  • Oil - 2 tsp
  • Methi seeds / Fenugreek Seeds -1/2 tsp
  • Mustard seeds-1/2 tsp
  • Salt - to taste

Preparation:
In a Kadai, heat oil, add the mustard seeds and allow it to pop.Now add  methi seeds and stir for few seconds .Now add the sun dried vegetables and cook till it is fried well.Add onions , tomatoes  and cook till it becomes soft.

Add the sambhar powder,salt and turmeric powder and stir for a minute.

Add the tamarind juice and bring the mixture to boil.

Cook till the oil separates out of the curry.



Serve hot with Steam rice and a side dish as per your choice to make it a perfect lunch menu .

Authentic Chicken Curry - No Tomato / Arachivitta Chicken Kolambu  / சிக்கன் குழம்பு


Ingredients:


  • Chicken - 250 gms , cleaned and chopped
  • Onion - 1 no , chopped
  • Turmeric powder - 1 tsp
  • Salt - To taste
  • Oil - 1 tbsp
To Roast and Grind:

  • Grated coconut - 1/4 cup
  • Whole red chilli - 6 no
  • Coriander Seeds - 3 tsp
  • Pepper Corns - 1 tsp
  • Cumin Seeds - 2 tsp

Method: 

Dry Roast all the contents  under the "TO Roast and grind table" in a hot tawa for few seconds and grind it to a paste by adding little water . Set aside .




Add the turmeric Powder to Cleaned chicken , Mix well . Set aside for 30 minutes .



Heat oil in a heavy pan , add the diced onion and cook till it become soft .




Throw in the chicken . Add salt and mix .





Add the ground puree from the mixer ,  little water and bring the contents to a boil . Allow them to boil for 10 minutes in open pan , so that the raw masala smell goes away .




Cover the lid and cook for few minutes till the oil seperates out from the curry and that the chicken is cooked tender .



Serve hot with steamed rice , Idly, dosai or roti and parathas
