Drumstick Leaves Fry | Murungai Keerai Poriyal

During my childhood days this recipe comes in our menu at least once in 2 weeks. We had a drumstick tree growing in our backyard and we got to have this leaves frequently . Unfortunately I do not get Drumstick leaves in USA .  Check out the other poriyal recipes by clicking here .This recipe is made by my mom , when I visited India this summer . Off to the recipe now .

Drumstick Leaves Fry | Murungai Keerai Poriyal

Benefits of the  Drumstick Leaves : 

These leaves are a great source of Iron and helps in controlling the glucose level .

Ingredients:

  • Drumstick leaves1 bunch , Leaves removed from the stalk
  • Salt - To taste .
  • Grated Coconut - 1 table spoon ( optional )

Tempering:

  • Oil - 1 tsp
  • Mustard seeds - 1 tsp
  • Urad dhal - 1 tsp
  • Onion - 1 numbers  , chopped
  • Whole Red chilli- 2 numbers , slit

      Method:

      Remove the drumstick  leaves from the Stalk .

      Wash the leaves in water  .


      Heat a kadai , Add the oil , add the mustard seeds and allow to pop . Now add the urad dhal and fry till they become brown in color . Add red chills and onion and cook till the onion become translucent .

       

      Now add the drumstick leaves , and Salt . 


      Cook till the leaves become soft . Add the grated coconut ( Optional ) and give a quick stir . Yummy poriyal is ready .


      We had this poriyal with Rice , Sambar and Rasam

      Notes:
      • Cleaning the leave can be made easy by wrapping the  whole bunch in a plastic cover and refrigerate it . Next day the leaves would have fallen from the stalk 
      • Do not add the water while cooking the leaf , It gets the required water from the leaf as we have washed it before cooking .

      Radish Pods Stir Fry with coconut | Radish Pods poriyal

      Radish Pods looks like green beans and when cooked it smells like radish . I made a simple stir fry of these pods and had it with sambar and Rice . Check out the radish leaf curry and also try the parathas made with radish and also a simple stir fry with radish . These pods are good for diabetic patients and also aids in weight loss as these pods are rich in fiber .

      Ingredients:

      • Moong Dhal / Lentils - 2 tbsp
      • Radish pods - 250 gms , chopped 
      • Salt - To taste
      • Grated coconut - 2 tsp

      Tempering:

      • Oil - 1 tsp
      • Mustard seeds - 1 tsp
      • Urad dhal - 1 tsp
      • onion - 1 no , chopped
      • Red chilli - 2 no , slit

          Method:

          Take  a kadai , add the Moong dhal and cover it with water and bring it to boil .


          Cook till the dhal becomes soft . Add the radish pods to the cooked dhal , add salt .Sprinkle water if needed for the pods to be cooked .


          Cook till the pods are soft .

          Take a pan , add some oil . Add the mustard seeds and allow it to pop . Now add the urad dhal and fry till they become brown in color . Add the slit red chilli , onions and cook till the onion become soft .


          Transfer the above contents to the cooked pods and dhal . Now sprinkle the grated coconut and stir .



          Serve hot .

          BITTER GOURD DHAL ( DAL ) RECIPE | பருப்பு பாவற்காய்

          Bitter Gourd Dhal ( Dal ) is a simple and a easy recipe made with lentils and Bitter gourd and tempered with aromatic spices . This bitter Gourd Dhal ( Dal )  is best served with Steamed Rice and Rotis or Parathas . So now off to Today's post Bitter Gourd Dhal ( Dal ) Recipe .

          Ingredients:


            • Moong Dhal - 1/2 cup
            • Tomato - 1 no , diced
            • Green Chilli - 1 no , Slit
            • Turmeric Powder - 1 pinch
            • Hing - 1 pinch
            • Salt - to taste

            Tempering:

            • Oil - 1 tsp
            • Onion - 1 no , Chopped
            • Bitter Gourd - 1 no , Chopped
            • Mustard Seeds - 1/2 tsp

            Method:


            • In a pressure Cooker add the moong dhal , tomato , green chilli , turmeric powder , and hing and cook for 2 hisses .Set aside .


            • In a Frying pan , add oil , throw in mustard seeds and allow it to crackle , add the urad dhal and red chilli  and fry for few seconds .Add the onions and bitter gourd and salt .Cook till they turn soft .


            • Transfer these contents to the dhal and mix  . Allow these contents to boil for few minutes ,. Turn the Bitter gourd Dhal ( Dal ).

            • Done ! Yummy Bitter Gourd Dhal ( Dal ) is ready to serve .

            Radish  Stir Fry Recipe / Mulangi Poriyal

            Ingredients :

            Oil - 1 tsp
            Mustard Seeds - 1/4 tsp
            Urad dhal - 1/2 tsp
            Whole red Chilli - 2 no , slit
            Daikon  Radish - 2 no , grated
            Salt - to taste

            Method :

            Heat oil in a shallow pan , add the mustard seeds and allow it to pop  , add the urad dhal and fry till golden brown in color and add the slit the whole red chills and fry .

             
            Add the grated radish , salt and sprinkle little water and cook till it becomes soft .



            Serve hot with steamed rice and roti .

            Tomato Bittergourd fry /  Thakali Paavakai varuval


            Ingredients:

            Tomato - 1 no , Pureed
            Chilli powder - 1 1/2 tsp
            Salt - to taste
            Yogurt - 2 tsp
            Lime juice - 2 drops
            Bitter Gourd - 4 nos , sliced
            Oil - 2 tsp

            Method:

            Slice the Bitter Gourd in to thin slices. Add the chili powder , salt , pureed tomato , yogurt , Lime juice and mix well .



            Set aside for 30 minutes.


            In a Kadai heat oil , add the mustard seeds  and allow it to pop , now add the urad dhal and fry till it turns brown .



            Now add the marinated bitter gourd .


            Cook in medium flame , till the bitter gourd gets roasted and turns brown in color .


            Serve hot with a curry and steamed rice .

            Radish Paratha / Mooli Paratha


            Radish Paratha / Mooli Paratha

            Ingredients:


            • Wheat flour ( Atta ) - 3 cups
            • Water - 1 1/2 cup
            • Oil - 1 tsp
            • salt - to taste
            • Radish -9 no
            • Chilli powder - 1/4 tsp

            Recipe:

            Peel the skin of the radish .


            Grate the radish .


            In a large bowl , mix the shredded radish, salt, chilli powder  and now start adding the wheat flour.Add little water to it and knead in to a soft dough  . Apply oil to the dough and set aside for 1/2 an hour .




            Take a small ball of dough and  roll it out in to a paratha using a rolling pin .



            Heat a flat non-stick pan and add the paratha to it , cook till it turns brown color on both the sides , by adding little oil on the ends of the paratha. .



            Repeat with rest of the dough.


            serve hot with slices of onion and a chili .

            Pavakkai Poriyal | Bitter gourd fry | Karela Fry


            Easy diabetic friendly recipe
            Pavakkai Recipe | Bitter gourd fry | Pavakkai poriyal


            Ingredients:

            • Bitter gourd - 3 numbers ,Chopped
            • Onion -  1 numbers , chopped
            • Oil- 2 table spoon
            • Mustard seeds - 1/4 tea spoon
            • Urad dal - 1/2 tea spoon
            • Salt - to taste
            • Sambar powder - 1 tea spoon ( Red Chilli Powder Can also be used )
            • Turmeric powder - 1 pinch
            • Curd - 1/4  cup, beaten  ( Click here for the recipe )

            Method:

            In a heavy bottom pan heat one table spoon  oil, add the mustard seeds and allow it to crackle.Now add urad dal and fry till it turns brown.Add the chopped onions and cook till it becomes soft.

            Add the chopped bitter-gourd ( Pavakkai ) , salt, sambar powder,turmeric powder and beaten curd and  mix .


            Mix well and allow it to cook till it becomes soft .



            Now put it in medium flame and add one table spoon  of oil and allow it to get roasted in oil. Cook till it turns golden brown color .

            Serve hot with rice after it turns brown in colour.

            Sundakkai Vatha Kulambu | Sundakkai Recipes

            Sundakkai Vatha Kulambu
            Vathal kolumbu /  Turkey Berry Curry / Sudakkai Kulambu

            Turkey berry / Sundakkai has amazing health benefits .It helps in controlling diabetics . 

            Ingredients:

            • Turkey berry / Sundakkai - 1/4 cup
            • Onion -1 no , chopped
            • Tamarind juice - 1/2 cup
            • Sambhar powder - 2 tsp ( Red Chilli Powder could be used )
            • Turmeric powder - 1 pinch
            • Oil - 2 tsp
            • Methi seeds / Fenugreek Seeds -1/2 tsp
            • Mustard seeds-1/2 tsp
            • Salt - to taste

            Preparation:
            In a Kadai, heat oil, add the mustard seeds and allow it to pop.Now add  methi seeds and stir for few seconds .Now add the sun dried vegetables and cook till it is fried well.Add onions , tomatoes  and cook till it becomes soft.

            Add the sambhar powder,salt and turmeric powder and stir for a minute.

            Add the tamarind juice and bring the mixture to boil.

            Cook till the oil separates out of the curry.



            Serve hot with Steam rice and a side dish as per your choice to make it a perfect lunch menu .
