vatha kulambu | வத்த குà®´à®®்பு | Tangy gravy made with sun dried vegetables

I had few leftover  sun dried vegetables called  "Vathal"  in Tamil so I decided to make this curry . This gravy is a very famous south Indian food . Its common in most of the restaurants in Tamil Nadu . Now off to the recipe .

Ingredients:
Method: 

Fry the sundried vegetable ( Vathal ) and set aside .


Heat oil in a wok . Add the mustard seeds and allow it to pop . Now add the urad dhal and fry for few seconds .Add the chopped onions and fry till they become translucent . Add the turmeric powder , Sambar powder and salt and mix .


Now add the vathal to it ( Sun dried Veggies ) and mix .


Pour the tamarind juice and bring the contents to a boil . Cook till the oil separates out of the gravy .



Serve warm .


This goes well with steamed Rice .

Sun dried Green chillies / Mor Milagai

Sun dried Green chillies / Mor Milagai
Ingredients:

To Sun dry:

Green Chilli- 250 gm
Thick Yogurt- 2 cups
Salt- to taste

To fry :

Oil - As required

Preparation:

To Sun Dry:

Slit the green chilli  in the middle , but do not make them in to two pieces or Make holes with  a pin in the green chilli.
Mix yogurt and salt together.
Add the slit green chilli in to the yogurt mix and immerse the chili in yogurt thoroughly.Let it stay in yogurt for 2 to 3  days in  hot sun .
Give a toss everyday.
After 2 - 3 days, arrange them in a wide plate and sun dry for another 4 days.
The green chilli would have turned brown in color.

To Fry:

Heat oil.Drop the dried chilli and fry till they turn dark brown in color

Serve this with curd rice.

Sun dried Cluster beans / Kothavaranga vathal

Ingredients:

To Sun Dry:

Cluster Beans / Kothavaranga
Salt-to taste
Water -As required

To Fry:

Oil

Procedure:

To Sun Dry:

Wash the Cluster beans in water.
Bring water to boil in the pan.
Add salt
Add the washed cluster beans to the boiling water
Cook till they become soft , but not mushy.
Drain the water.Dry the cluster beans under hot  sun for 2 days.
After they are dried complelty, store in an airtight container.
They could be added to ant tangy gravies or sambar or in making any curries

To fry: 

Heat oil in a shallow pan, Drop the sun dried cluster beans in oil.Fry till they become golden brown in color.
Serve with Curd rice, sambar rice or rasam.They taste too good.

 Ingredients:

To Sun Dry:
Turkey Berry / Sundaikkai - A handful
Yogurt - 1 cup
Salt-As required

To Fry:

Sun dried Turkey Berry / Sundaikai
Oil


Recipe:
In a mixing bowl add the yogurt and salt and whisk.
Tap the turkey berry to slit half open .
Drop the turkey berries in curd and mix well.
Spread the mixture in a plastic sheet and allow it to sun dry for 4 to 5 days.
Transfer it to air tight container

To fry:
Heat oil.Deep fry the sun dried turkey berries / Sundaikkai in oil for a dark brown color.
Serve this with curd rice.
This is also used to make vathal kulambu / curries.

Sundakkai Vatha Kulambu
Vathal kolumbu /  Turkey Berry Curry / Sudakkai Kulambu

Turkey berry / Sundakkai has amazing health benefits .It helps in controlling diabetics . 

Ingredients:

  • Turkey berry / Sundakkai - 1/4 cup
  • Onion -1 no , chopped
  • Tamarind juice - 1/2 cup
  • Sambhar powder - 2 tsp ( Red Chilli Powder could be used )
  • Turmeric powder - 1 pinch
  • Oil - 2 tsp
  • Methi seeds / Fenugreek Seeds -1/2 tsp
  • Mustard seeds-1/2 tsp
  • Salt - to taste

Preparation:
In a Kadai, heat oil, add the mustard seeds and allow it to pop.Now add  methi seeds and stir for few seconds .Now add the sun dried vegetables and cook till it is fried well.Add onions , tomatoes  and cook till it becomes soft.

Add the sambhar powder,salt and turmeric powder and stir for a minute.

Add the tamarind juice and bring the mixture to boil.

Cook till the oil separates out of the curry.



Serve hot with Steam rice and a side dish as per your choice to make it a perfect lunch menu .
