MUTTON BIRYANI | LAMB BIRYANI | மட்டன் பிரியாணி | AATU KARI BIRYANI ( PRESSURE COOKER METHOD )


Mutton Biryani ( Lamb or Goat ) Biryani is an authentic Indian dish . Mutton Biryani is a Famous and a flavorful Indian dish made with mutton and Rice cooked together with some aromatic Indian spices . So now off to today's recipe Mutton Biryani .

MUTTON BIRYANI | LAMB BIRYANI | மட்டன் பிரியாணி | AATU KARI BIRYANI ( PRESSURE COOKER METHOD )

 

Mutton Biryani - Ingredients:

Preparation Time :30 minutes  | Cooking Time : 30 minutes
Recipe Category: Main course  | Recipe Cuisine:  India 

  • Ghee / Oil - 100 grams
  • Onion - 300 grams
  • Mint leaves - a handful,Chopped
  • Coriander leaves - A handful,Chopped
  • Cinnamon Stick- 1number
  • Cloves-  4 numbers
  • Bay leaf - 1 number
  • Star Aniseed -1 number
  • Black cardamon - 1 number
  • Cumin seeds - 1/4 teaspoon
  • Fennel seeds - 1/4 teaspoon
  • Green Chilli - 4 numbers , slit
  • Red Chilli powder - 1/2 teaspoon
  • Curd ( Yogurt )- 1/2  cup , beaten ( Click here for the recipe )
  • Lemon juice - 1 teaspoon
  • Tomatoes - 120 grams, chopped
  •  Ginger Garlic paste - 100 grams ( Click here for the recipe )
  • Basmathi rice - 500 grams
  • Turmeric powder  - 1/2 teaspoon
  • salt - to taste
To Marinate:
  •  Lamb / Goat  Pieces - 500 grams ( Cleaned and chopped ) 
  • Yogurt / Curd - 1/4 cup ( Click here for the recipe )
  • Ginger Garlic paste - 2 tablespoon ( Click here for the recipe )
  • Salt - to taste
  • Red Chilli Powder -  2 teaspoon
  • Turmeric Powder - 1 teaspoon

Method: 

  • Combine all the ingredients under the  "To marinate" section , and set aside for 1/2 an hour . Transfer these contents to the pressure cooker , add 1/2 cup of water and pressure cook them  for 10 hisses , or till the lamb becomes tender . Don't drain the water .


  • In a pressure cooker , add the oil / Ghee add the cinnamon stick , cloves , bay leaf , aniseed , fennel seeds , cumin seeds , black cardamon  and allow the contents to fry  a bit . They give a wonderful aroma .  Now add the sliced onions , green chilli , mint leaves and fry till the onions become translucent .



  • Now add the chopped tomatoes and cook till they become soft .




  • Now add in only the cooked mutton pieces , yogurt  and mix well .( Do not add water this time )


  • For 1 cup of basmathi rice add 1 1/2 cup of water. Now add the left over water from the cooked meat and Similarly calculate and  add the required water to boil the rice.


  • Add the turmeric powder , red chilli powder , mint leaves , coriander leaves and salt and bring the contents to boil .


  • Add the Basmati rice .


  • Pressure cook in a medium high flame for only 1 hisses . Turn off . Open the lid , add the lemon juice and give a gentle stir


  • Serve hot with Raitha , and boiled egg.


  • Enjoy this easy and tasty Mutton Biryani !

Pineapple Juice | Fresh Juice Recipe



Ingredients:

  • Pineapple - 1/2 cup Cut in small cubes
  • Water - 1 cup
  • Sugar - To taste 

Method: 

In a juicer or a mixer add the pine apple cubes .


Add some sugar .


Add water , and run the mixer or blender . Filter them in a muslin cloth .


Squeeze out the juice from the ground chunks . Serve with chilled Ice cubes .


Enjoy this perfect juice on a hot sunny day.

Plantain Fritters / Raw banana Fritters / Valakkai Bajji / வாழைக்காய் பஜ்ஜி


Ingredients :

  • Gram Flour ( Kadalai Maavu / Channa dhal flour ) - 1 cup
  • Rice flour - 2 tsp
  • Hing - 1 pinch
  • red chili powder - 1/2 tsp
  • Salt - to taste
  • Oil - for frying
  • Plantain / Valakkai / Raw banana - cut in to circles

Method:

In a mixing bowl , add the gram flour , rice flour , salt , hing , red chilli powder and mix .


Add some water and mix it to a dosa batter  ( Not too thick and not too watery )  consistency .


Cut the raw banana in circles and immerse them in water so that they don't turn brown in color .


Drop the cut banana  in to the batter and coat it well with the batter .


Heat oil in a shallow frying pan and drop the batter coated plantains in oil , and deep fry till they turn golden brown in color.


Serve hot with sauce or any chutney . Enjoy these fritters with a cup of chai .

Banana Bread / Banana Cake Recipe

Banana Bread or is it a Banana cake ? Well even i was confused , but this bread tasted in between a cake and Bread  but believe me they taste absolutely  fantastic . My whole family had a perfect treat this evening when my husband  baked this . So now off to the recipe .




Ingredients:

  • Granulated sugar - 150 gms
  • Almonds - 10 nuts , chopped
  • Rasins - few ( As per taste )
  • All purpose flour - 230 gm
  • Eggs - 2 no
  • Unsalted butter -113 gm
  • Banana - 3 no large & ripe
  • Vanilla Extract - 1 tsp
  • Baking Soda - 1/4 tsp
  • Baking powder - 1 tsp
  • Salt - 1/4 tsp
  • Cinnamon Powder - 1 tsp
 Method:

Peel the skin of the banana and mash them with the fork .


Melt the butter and cool it .



In a mixing bowl , add the flour , baking soda , baking powder , cinnamon powder , and almonds and mix well .


In a mixing bowl , break the eggs and add the melted butter and mix using a spatula .


Add the mashed banana to the above contents and mix using a spatula .


Now add the above contents to the dry ingredients . Throw in rasins and allow the contents to be combined ( Not mixed as it yields a rubbery bread if mixed too much )


 Preheat the oven to 350 F . Line the bread mold using the foil , and grease the foil with a not stick spray and dust with some flour .
Transfer the combined contents to the mold and bake for 60 minutes .


Bake till the bread is golden brown and the tooth prick inserted comes out clean .


Allow it to cool and remove the bread from the pan .


Slice it and Enjoy!

Sponge Dosa / Poha Dosa / Awal Dosa / atukula attu / Rice Flakes Dosa

Sponge Dosa / Poha Dosa / Awal Dosa / atukula attu 
Ingredients:

  • Rice - 2 cups
  • Poha / Rice flakes / Awal - 1/2 cup
  • Salt - to taste
  • Butter Milk - 4 cups
  • Baking Soda - 1/4 tsp 

Method: 

In a mixing bowl add the rice and rice flakes .


Add the thick butter milk , mix well .



Cover with the lid . Set aside over-nite for for 8 - 10 hrs. Let it foam .


Transfer it to a blender and grind it well .


The batter will be thinner than the dosa batter . Add some salt and baking soda and mix well .


Heat an iron tawa . Pour a ladeful of batter ,  and do nor spread it . It will spread automatically .


Drizzle some oil around the edges . Cover with the lid and allow it to cook well .


There will be holes formed on the dosa and it is spongy soft .


Enjoy with chutney of your choice .

Cow Peas Curry / Black eye Beans Curry / Karamani Kara Kulambu / Karamani Puli Kulambu / காராமணி குழம்பு

Cow Peas Curry / Karamani Kara Kulambu / Karamani Puli Kulambu

Ingredients:

  • Cow peas / Karamani - 1/2 cup
  • Moong Dhal - 1/2 cup
  • Hing - 1 pinch
  • Turmeric powder - 1/4 tsp

Tempering:


  • Oil - 2 tsp
  • Mustard seeds - 1/2 tsp
  • Urad dhal - 1/2 tsp
  • Onion - 1 no , diced
  • Tomato - 1 no , diced
  • chopped Drum sticks  - 5 pieces
  • Tamarind juice - 1/2 cup
  • Salt - to taste
  • Sambar powder - 1 tbsp

Method:

In a pressure cooker dry roast the cow peas / Karamani to slight brown in colour .


Add water , moong dhal , turmeric powder , hing .


Cover with the lid and pressure cook for 4 hisses .


In a kadai , add oil . Add the mustard seeds allow to pop . Add in the urad dhal and fry till it turns brown in color .


Add in the onions and tomatoes , cook till it turns soft . Throw in the drum stick . Add the sambar masala , salt and mix.


Pour the tamarind juice and bring the contents to boil .


Transfer these contents to pressure cooked dhal and the karamani mixture and mix .


Cover with the lid and pressure cook for 1 hisses . Serve hot.


Enjoy this with roasted papad and hot piping rice .
