Radish Paratha / Mooli Paratha


Radish Paratha / Mooli Paratha

Ingredients:


  • Wheat flour ( Atta ) - 3 cups
  • Water - 1 1/2 cup
  • Oil - 1 tsp
  • salt - to taste
  • Radish -9 no
  • Chilli powder - 1/4 tsp

Recipe:

Peel the skin of the radish .


Grate the radish .


In a large bowl , mix the shredded radish, salt, chilli powder  and now start adding the wheat flour.Add little water to it and knead in to a soft dough  . Apply oil to the dough and set aside for 1/2 an hour .




Take a small ball of dough and  roll it out in to a paratha using a rolling pin .



Heat a flat non-stick pan and add the paratha to it , cook till it turns brown color on both the sides , by adding little oil on the ends of the paratha. .



Repeat with rest of the dough.


serve hot with slices of onion and a chili .

Snake gourd Kootu / Pudalangai poriyal / Pudalangai Kootu  / Snake gourd Fry
Snake gourd fry  / Pudalangai poriyal

Ingredients:
  • Snake gourd-1 no, chopped .
  • Moong dal - 4 tbsp
  • grated coconut - 2 tsp ( optional )
  • salt-to taste
Tempering:
  • oil -2  tsp
  • Red chilli - 2 no slit
  • onion -1 no , chopped
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp

Preparation:

In a pan bring the water to boil add the moong dal and allow it to cook till it is 80% cooked.


In another vessel cook the chopped snake gourd , salt, and little water and allow it to cook.



Now transfer the cooked moong dhal to the cooked snake gourd.



In another pan , heat oil add mustard seeds , urad dal , slit red chilli ,  chopped onions and cook till onions become soft.


Transfer these contents to the vegetable and stir.

Now add the grated coconut and stir.

Serve hot with steamed rice , and a curry .

CHICKEN LIVER FRY RECIPE | KOZHI ERAL VARUVAL

CHICKEN LIVER FRY RECIPE | KOZHI ERAL VARUVAL



Ingredients:

  • Chicken liver - 250 grams , Cleaned and chopped in to medium size pieces 
  • Red chilli- 6 numbers
  • Turmeric powder - 1 pinch
  • Onion - 150 Grams , chopped
  • Salt - To Taste
  • Oil - 1 tablespoon
  • Cumin Powder - 1 tea spoon
  • Pepper Powder - 1 1/2 tea spoon

Preparation:

In a Kadai add the oil , after it is heated add the chopped onions and slit red chillies and cook till onion becomes soft .


Add the chopped chicken liver pieces turmeric, cumin and  pepper powders, Salt and Stir . ( Add the pepper powder , Turmeric powder immediately after the chicken Liver is added , as this removes any smell from the Chicken Liver )


Cook in medium heat . cook till the oil separates out from the gravy.

Now the chicken Liver Fry is ready to serve .


Serve this with Steamed Rice and Rasam . This also Goes well with flat breads .

BUTTER BEAN PORIYAL | BUTTER BEAN FRY | BUTTER BEAN RECIPES

Butter bean is rich in protein . I at least include this once a week in out menu . Today's post is a simple Stir fry recipe made with Butter Bean and Coconut . This is a very famous recipe in south India served along with Rice , Sambar and rasam recipes . Off to Today's post Butter Bean Poriyal ( Stir Fry ) .

Butter Bean Poriyal ( Stir fry with Coconut ) Recipe
BUTTER BEAN PORIYAL | BUTTER BEAN FRY | BUTTER BEAN RECIPES

Ingredients:


  • Butter beans - 1 cup (soaked overnight ) Or use the Canned Butter Bean available in grocery store .
  • Onion -1 number , chopped
  • Curry powder Or Red Chilli Powder -1 tea spoon ( Click here for the recipe )
  • Turmeric powder - 1 pinch
  • Grated Coconut - 2 tablespoon
  • Mustard seeds - 1/2 tea spoon
  • Urad dal -1 tea spoon
  • Oil - 2  teaspoon
  • Salt - to taste

Method :

  • Soak the Butter Bean in water overnight .( The Canned Butter Bean Can also be used  that is precooked  . The canned Butter bean is available in the grocery store )



  •  In a kadai, heat oil.Add the mustard seeds and allow it to splutter.Add urad dal and stir for a minute. Now add the onions and cook till it becomes soft.Add the Soaked Butter Bean and Add the Curry powder or Red chilli powder , turmeric powder and salt and stir for few seconds till raw smell goes away.

  • Add some water and bring the contents to boil.  Cook till the butter Bean become soft . ( If using Canned Bean no need to add water .)



  • After it is cooked soft add the grated coconut and give a nice stir .


  • Cook till the butter bean becomes dry . Serve hot . 


  • Delicious Butter Bean Poriyal ( Stir Fry ) is ready to serve .

CHICKEN KORMA ( KURUMA ) RECIPE | CHICKEN RECIPES

Chicken Korma , ( Kuruma ) is a traditional Indian Dish that is made with coconut and other spices cooked with  chicken to make this delicious stew . Off to today's post Chicken Korma Recipe .

Ingredients:

  • Chicken - 250 grams ,cut in small pieces
  • Onion -1 number , chopped
  • Oil - 2 teaspoon
  • Turmeric powder -1 teaspoon
  • Salt - to taste
  • Cinnamon Stick - 1 number
  • Cloves - 2 numbers
  • Star Aniseed - 1 number

To Grind :

  • Grated coconut - 1/2 cup
  • Mint leaves - Few leaves ( I used one tea spoon of mint leaves powder )
  • Ginger - 15 grams , chopped
  • Garlic pods -15 gms
  • Fennel seeds - 1/4 teaspoon
  • Curd - 1/4 cup 
  • Green Chilli's - 4 numbers , chopped

Preparation:


  • Grind together all the ingredients under to grind Column to a paste . The ingredients to grind are Green chilli , coconut , yogurt  , ginger , garlic , Mint leaves  and fennel seeds . Set aside .


  •  In a small pan or Pressure Cooker , add  oil, add the Cinnamon stick , Cloves and Aniseed  and fry in oil for few seconds . It gives a nice aroma . Now add the onions and cook till it become soft . Add the cleaned chicken to it . Throw in the turmeric powder and stir .
 
  • Now add the Ground Contents to the chicken .


  • Add little water ,salt  and bring the contents to a boil .


  •  Now close the pressure cooker and cook for 2 whistles. Once the chicken is cooked the oil separates out from the curry .
