MICROWAVE FRUIT CAKE | INDIAN PLUM CAKE IN MICROWAVE

Christmas is around and still I have not yet started to bake . I was too lazy to do something , but today I landed in  quick and a simple Plum cake recipe made in microwave . Thanks to aarthi fo the recipe .  This is one of the easiest and the quickest cake made in the microwave and it taste soft and Yum . so now off to today's post Microwave fruit cake recipe .

Microwave Fruit cake - Ingredients

Preparation Time - 15 minutes | Cooking Time - 3 minutes 
Cuisine - Indian | Serves - 3  | Recipe category - Dessert

  • All Purpose flour - 1 cup
  • Cocoa Powder - 3 tablespoon
  • Baking soda - 1/2 teaspoon
  • Sugar - 1/2 cup
  • Oil - 1/4 cup
  • Demerara syrup - 1/4 cup
  • Water - 1/2 cup 
  • Raisins - Few
  • Tutti fruity - Few , as needed

    Method :

    • Take a microwave safe bowl . Add water  and microwave for 1 - 2 minutes . Add the raisins and tutti fruity to the water and set aside for 10 minutes.


    • Take a flour in a mixing bowl , add the cocoa powder and baking soda .


    • Mix them well .Set aside .



    • In the meantime , the fruits have been well soaked in hot water . Now add the sugar .


    • Now add the oil and Mix well.


    • Add the Demerara syrup and Mix well .


    • Transfer the wet contents to the dry ingredients .


    • Mix well .


    • Grease the microwave safe bowl with some oil or spray .


    • Add the cake mix to the bowl .


    • Now its time to bake . Microwave the cake for 3 - 4 minutes . Mine took only 3 .50 minutes . Done !


    • Allow them to cool down completely . Invert them on to a plate .


    • Slice them .


    • Microwave Plum cake is ready to serve .

    Notes :

    • Do not cook the cake for long time as they become rubbery .
    • Cooking time varies from Microwave oven to Oven .
    • Demerara syrup can be replaced with honey , Dates syrup or Molasses

    SORAKKAI KOOTU | BOTTLE GOURD CURRY

    This is a simple and a quick curry made with Sorakkai AKA Bottle gourd with some authentic Indian ground masala and spices . Any squash could be used if you cant find a Bottle Gourd . This Sorakkai Kootu pairs well with Steamed Rice and roti recipes . So now off to Today's post Sorakkai Kootu or Bottle gourd Curry Recipe .

    SORAKKAI KOOTU | BOTTLE GOURD CURRY 

    Sorakai Kootu - Ingredients

    Preparation Time : 10 minutes  | Cooking Time : 30 minutes
    Recipe Cuisine:
    South Indian  | Serves : 4 

     

    • Channa dal - 1 cup
    • Sorakkai or Bottle gourd  - 1 number , Skin Out and Diced
    • Tomato -1 number ,  chopped
    • Onion -1 number ,  chopped
    • Hing -1 pinch
    • Curry Powder -1tablespoon ( Click here for the recipe )
    • Turmeric powder - 1 pinch
    • Water - As needed
    • Green Chilli - 1 number , Slit
    • Salt-to taste

    To Temper :

    • Oil - 1 teaspoon
    • Mustard seeds - 1/2 teaspoon
    • Urad dal - 1/2 teaspoon
    • Coriander leaves - Few , Chopped ( Optional ) 

    To Grind :

    • Coconut - 1/2 cup , grated
    • cumin seeds - 1 teaspoon
    • water - As needed


         

        SORAKKAI KOOTU | BOTTLE GOURD CURRY 

         

        Method :

        • Skin out the bottle gourd aka sorakkai and dice them in to cubes .


        • Take the grated coconut and cumin seeds in a blender . Grind them in to a paste  by adding water and set aside .


        • In a pressure cooker add the channa dal, tomato,onions,squash,turmeric powder , Curry powder ,and hing .

         

        • Add some water and mix .
         

        •  Cover with the lid and pressure cook the contents  for 2 hisses .
        • Now add the Ground Coconut and Cumin paste and bring the contents to a boil . 
        • In a pan add oil,  add the mustard seeds and allow it to pop ,add urad dal , and coriander leaves and allow it to sizzle .
         


        • Transfer the tempered contents to the pressure cooked contents , add salt and mix-well .
         

        • Done !


        • Yummy Sorakkai Kootu Or Bottle gourd curry is ready to be served . This Bottle gourd Curry or Sorakkai kootu could be served with Steamed Rice , Idly , Dosa , Parathas .

        Note :

        • Red Chilli Powder and Coriander powder in a ratio 1:1 that is one tea spoon of red chilli powder and one tea spoon of coriander powder  could be substituted for Curry Powder  .

        TANDOORI GOBI | HOW TO MAKE TANDOORI CAULIFLOWER RECIPE

        Tandoori Gobi is an Indian recipe made with cauliflower marinated with spiced masala and then baked in Tandoori Oven. This recipe is a Zero oil recipe and its very healthy . This Tandoori Gobi recipe is a similar recipe to my Tandoori Chicken Recipe . So now off to Today's recipe Tandoori Gobi Recipe .

        Tandoori Gobi - Ingredients

        Preparation Time :1 hour  | Cooking Time : 1 hour
        Recipe Category: Starters  | Recipe Cuisine:  Indian
        • Cauliflower -1 number ,separated in to florets and blanched
        • Ginger garlic paste - 1 tablespoon ( Click here for the recipe )
        • Yogurt - 1 tablespoon ( Click here for the recipe )
        • Lemon juice- 1/4  teaspoon
        • Paprika powder - 1 teaspoon (It gives the natural red color)
        • Chilli powder or Curry Powder  - 2 teaspoon (  Click here for the recipe )
        • salt - As per taste

           

          Method:

          • Bring a water to boil in a pot . add some salt .  Add the cauliflower and let them stay for 2 minutes . Drain the water and set aside the florets .  This process is called blanching .
          • Take the Cauliflower Florets in a Mixing bowl . Add the ginger garlic paste , Yogurt , Lemon juice , Paprika powder , Curry powder or Red chilli powder and salt  .


          • Mix them well and set aside the marinade for at least an1 hour .


          • Line the Baking Tray with aluminum foil .Preheat the oven at 375 F . Drop the marinade cauliflower florets in the Baking Tray .


          • Bake them for 30 minutes . Flip to the other side and Bake them for another 30 minutes . Cook till the cauliflower becomes Golden brown in color .


          • Tandoori Gobi is ready .

          BADAM BURFI RECIPE | HOW TO MAKE ALMONDS BURFI

          Badam Burfi or Almond Burfi is a quick sweet recipe that can be made in a jiffy . Badam Burfi can be a great substitute to the cashew burfi or Kaju Katli recipe . My kids absolutely loved these burfis . The Burfis tasted too good and soft and they melt in the mouth with a bite of badam burfi . So now off to today's post Badam Burfi recipe .

          Badam Burfi - Ingredients

          Recipe Cuisine: Indian  |  Recipe Category: Sweet
              Cooking time:
          30 minutes    

          • Badam / Almond - 1 cup
          • Sugar - 1 1/2 cup
          • Water - 1/4 cup
          • Milk - 1/2 cup
          • Ghee - 1 tablespoon ( Click here for the recipe )

              Method :

              •  The first step is to blanch the almonds , Badam . Bring some water to a boil in a heavy bottom pan . Add the Almonds . Let them stay in hot water for 5 minutes .


              • Strain the water . Peel the skin of the Almonds and discard the outer skin .


              • Transfer them to a blender . Add 1/2 cup of milk and grin them to a smooth paste .

              • Meanwhile , take a wok and add sugar and 1/4 cup of water in it . Bring them to a boil till it reaches one string consistency . 


              • Now add the ground Badam paste to th sugar syrup and Mix well .


              • Mix them well so that no lumps are formed .


              • Add ghee and mix them well . Cook till the burfi starts leaving the ends of the wok and till it becomes a thick mass . Transfer them to a greased plate .( I lined my bowl with Aluminum foil and greased them with ghee so that i can flip over the foil easily)

               .
              • Allow them to cool down . Once cooled slice them well .


              • Badam Burfi or Almonds Burfi is done .



              • Enjoy these  burfis on a Festive Occasion or on a special day .

              Notes :

              • Water can be  used for grinding the Badam instead of Milk
              • One string consistancy of sugar syrup can by checked by holding the syrup between the thumb and index finger and form a single thread .
              • Adding ghee could also be skipped .

              METHI MUTTER MALAI | PEAS FENUGREEK LEAVES CURRY

              Methi Mutter Malai is a simple subzi made with Peas ( Matar ) and methi cooked in a creamy rich sauce . This recipe pairs well with Naan and roti recipes . So now off to today's post Methi Mutter Malai recipe with step wise photos .

              Methi Mutter Malai - Ingredients 

              Preparation Time : 10 minutes  | Cooking Time : 30 minutes
              Recipe Cuisine: North Indian  | Serves : 4

              • Peas - 1 cup , ( Use Fresh or Frozen )
              • Methi Or Fenugreek leaves - 1/2 bunch leaves, ( Leaves removed from stem and chopped )
              • Turmeric Powder - 1/4 teaspoon
              • Garam Masala - 1/2 teaspoon
              • Butter - 1 tablespoon
              • Fresh cream - 1/4 cup ,  ( Click here for the recipe )
              • Cumin seeds - 1/2 teaspoon
              • Salt - to taste

              To Roast and Grind :

              • Green Chilli - 2 numbers , slit
              • Ginger Garlic Paste - 1 tablespoon   ( Click here for the recipe )
              • Onion - 1 number , Diced
              • Tomato - 1 number , slit 
              • Cashew - 5 -6 pieces 
              • oil - 1 teaspoon

                Method :

                • Heat a wok or a heavy bottom pan . Add oil . Add in the onions and cook till they become soft . Add the ginger garlic paste and fry till raw smell goes away . Add the tomatoes, green chilli and cook till the tomatoes become mushy . Allow them to cool down .


                • Transfer the contents to a blender . Add the cashew nuts .


                • Blend them in to a puree . set aside .

                • Melt Butter in a wok . Add the cumin seeds and allow them to crackle .


                • Add the peas and stir fry them for few seconds .


                • Add the methi leaves and mix .


                • Add the turmeric powder , Garam Masala Powder , salt and mix them well .


                • Transfer the ground contents from Blender to the contents and mix them well .


                • Bring the contents to a boil . 
                • Finally add some fresh cream to the gravy .


                • Once the fresh cream is added switch off the flame .Methi Mutter Malai is done !
