HOW TO KNEAD ATTA ( CHAPATI DOUGH ) IN WET GRINDER

One of the quickest and the easiest method to knead dough is by using the wet grinder  . I usually knead Atta ( Chapati flour ) in my wet grinder once a week when I usually grind the Idly batter . The kneaded Atta ( Chapati dough ) can be stored in an airtight Container and refrigerated and be used as needed . How to Knead Atta ( Chapati Dough ) -Ingredients

Preparation Time : 5 minutes
Recipe Category: Basics  | Recipe Cuisine: Indian

  • Atta ( Chapati Flour ) - 2 cups
  • Water - 1 cup
  • Salt - To taste
  • Oil - 2 to 3 drops

      Method:

      • This is my attachment for kneading dough that came with my wet grinder .


      • Fix this Attachment on the wet grinder .


      • Add the Chapati Flour ( Atta ) to the wet grinder followed by salt .
       


      • Switch on the grinder and allow them to mix . Now start kneading the dough by adding water .


      • Keep adding water little by little .


      • After one minute my chapati dough is kneaded in my wet grinder .


      • Transfer the kneaded dough in to a shallow bowl and add 2 to 3 drops of oil .


      • Knead them by hand for once and set aside for 2 hours before rolling them to rotis . 


      Done ! Super easy method of Kneading dough in wet grinder.  This dough could be used to make parathas , Poori , Roti .


      Notes :
      • I usually add one cup of water for two cups of flour and if the flour needs more water it can be added for  appropriate consistency.
      • This dough can be stored in the refrigerator and used for up to a week .

      ROTI NOODLES | TORTILLA NOODLES RECIPE | HOW TO MAKE CHAPATI NOODLES

      Roti , Chapati ( Tortilla ) Noodles is a simple quick stir fry dish made with some left over rotis or tortillas . This can be packed for kids lunch box as well . This Roti ( tortilla )  is very easy to make and could be made healthy with the addition of some colorful veggies .Leftover rotis , chapati or Tortilla can be turned in to a fresh dish .  So now off to today's post how to make roti or Tortilla Noddles .

      Roti ( Tortilla ) Noodles - Ingredients

      Preparation Time : 10 mins | Cooking Time : 15 mins
      Recipe Category: Snack | Recipe Cuisine: Indian
      • Leftover Rotis Or Torillas - 4 numbers ( click here for the recipe )
      • Bell Peppers - 1 number , chopped length wise ( Click here for the recipe ), I used frozen bell peppers
      • Carrots - 1 number , chopped lengthwise
      • Ginger Garlic paste - 1 tablespoon  ( Click here for the recipe )
      • Onion - 1 number , Chopped
      • Red chilli powder - 1 teaspoon
      • Soya sauce - 1 tea spoon
      • Lemon juice -2 - 3 drops
      • Salt - to taste 
      • oil - 1 teaspoon

      Method :

      • Take the Tortillas or roti and chop them length wise . set aside .


      • Heat oil in a wok . Add the ginger garlic paste and fry till the raw smell goes away . Now add the onions and cook till they become translucent .


      • Add the colorful veggies , red chilli powder and saute them .The veggies should be crunchy . Do not over cook them .


      • Add the soy sauce .



      • Mix the contents well and add few drops of lemon juice . This gives a nice tangy taste .




      • Yummy Roti noodles are ready to serve ..

      Notes

      • Any veggies could be added to make this dish . 
      • Lemon juice is optional and could be replaced by one tomato which is sauteed along with the onions .

      Wheat Naan Bread | Naan Recipe No yeast Method - Step by Step pictures

      Naan bread is my all time favorite food in the restaurant . Recently we started to make Naan at home . Check out my naan recipe made with Yeast and all purpose flour  by clicking here . Today's recipe is made with Wheat flour and no yeast is used in this recipe . Off to the recipe now .

      Ingredients:

      To Knead the dough
      • Wheat Flour / Aatta  - 3 Cups
      • Yogurt - 1/2 cup
      • Oil - 1/4 cup
      • Baking powder - 3/4 tea spoon
      • Baking soda - 1/4 teaspoon 
      • Salt - To taste
      • Water - As needed
      For Dusting :

      • Wheat flour - As needed 


        Method: 

        In a mixing pan , add the wheat flour , Baking powder , Baking soda salt and Mix .


        Make a well in between and add the oil .


        Now add the Yogurt .


        Mix the dry and the wet ingredients together .

         
        Add water as needed to make in to a soft dough .


        Set aside for 2 hours . Make small balls of the dough . Dust using the wheat flour and roll out the balls in to oval shape .


        Heat the iron Griddle , and cook the naans .


        Once the bubbles come up , flip it to the other side and cook the other side as well .

         
        Serve hot .

        Homemade Tortillas / Vegan Tortillas Recipe / Flour Tortillas



        Ingredients:

        •     All Purpose Flour - 3 cups
        •     Baking Powder - 1 tsp
        •     Oil - 1 tbsp ( I used Canola oil )
        •     Steaming hot water - As required
        •     Salt - to taste




          Method:

          Bring the water to boil  .




          In a mixing bowl , sieve the  flour and baking powder together . Add some oil, salt and mix  with hand .




          Pour in the steaming hot water and knead in to a soft dough . Use a spatula to do this , because the hot water may hurt your hand .



          Set aside the dough for 30 minutes .


          Make tiny balls of the dough and roll out in to a thin sheet


          Heat the griddle , and cook the tortilla on both sides.



           These tortillas  were super soft and delicious .



          The tortillas could be allowed to cool , stack it and freeze it OR as soon it is cooked put these in a zip-lock bag and close it immediately and let these stay air tight and then refrigerate it .Microwave for 30 seconds and reuse it if taken from refrigerator .

          Paneer Paratha / பன்னிà®°் பரோட்டா

          Paneer Paratha / பனீà®°் பரோட்டா


          Ingredients:

          For the Dough:

          • Wheat Flour / Aatta -  2 cups
          • Oil - 1 tsp
          • Salt - To taste
          • Water - As required

          For the Filling:

          • Paneer - 200 Gms , Crumbled
          • Peas - 1/2 Cup , cooked ( I used frozen peas ) , { Optional }
          • Ginger Garlic Paste - 1 tbsp
          • Green chilli Paste - 1 tsp
          • Salt - To taste
          • Oil - 1 tsp

             
            Paneer Paratha / பனீà®°் பரோட்டா


            Method :

            In a Mixing Bowl , add the Wheat flour , oil , salt and knead them in to a soft dough . Set aside .






            In a Kadai , heat oil , add the ginger garlic paste , chilli paste and throw in the cooked peas and stir .



            Now add the crumbled paneer , salt and cook for few minutes . Turn off . Allow the contents to cool completely .




            Take a small piece of the dough , dust some flour and roll out in to a very small circle .


            Take the masala, make in to a small ball that fits inside the dough and place it in the middle .



            Gather the edges of the paratha , and pleat them over the filling . 



            Similarly complete the filling for all the remaing dough .


            Take the filled dough , dust with flour and roll out to a paratha of desired thickness .



            Heat the tawa and cook the paratha .


            Flip it to the other side and cook as well .





            Serve hot with Raitha and some pickle .


             To Freeze the Paratha :

            Allow the parathas to completly cool down .Stack the parathas . Cover them with the foil and freeze .


            Use as desired . Take the freezed paratha and put it on a heated tawa and cook for 2 minutes , one minute for each side .

            The parathas will be super fresh .  My Kid love this dish too.
