MICROWAVE FRUIT CAKE | INDIAN PLUM CAKE IN MICROWAVE

Christmas is around and still I have not yet started to bake . I was too lazy to do something , but today I landed in  quick and a simple Plum cake recipe made in microwave . Thanks to aarthi fo the recipe .  This is one of the easiest and the quickest cake made in the microwave and it taste soft and Yum . so now off to today's post Microwave fruit cake recipe .

Microwave Fruit cake - Ingredients

Preparation Time - 15 minutes | Cooking Time - 3 minutes 
Cuisine - Indian | Serves - 3  | Recipe category - Dessert

  • All Purpose flour - 1 cup
  • Cocoa Powder - 3 tablespoon
  • Baking soda - 1/2 teaspoon
  • Sugar - 1/2 cup
  • Oil - 1/4 cup
  • Demerara syrup - 1/4 cup
  • Water - 1/2 cup 
  • Raisins - Few
  • Tutti fruity - Few , as needed

    Method :

    • Take a microwave safe bowl . Add water  and microwave for 1 - 2 minutes . Add the raisins and tutti fruity to the water and set aside for 10 minutes.


    • Take a flour in a mixing bowl , add the cocoa powder and baking soda .


    • Mix them well .Set aside .



    • In the meantime , the fruits have been well soaked in hot water . Now add the sugar .


    • Now add the oil and Mix well.


    • Add the Demerara syrup and Mix well .


    • Transfer the wet contents to the dry ingredients .


    • Mix well .


    • Grease the microwave safe bowl with some oil or spray .


    • Add the cake mix to the bowl .


    • Now its time to bake . Microwave the cake for 3 - 4 minutes . Mine took only 3 .50 minutes . Done !


    • Allow them to cool down completely . Invert them on to a plate .


    • Slice them .


    • Microwave Plum cake is ready to serve .

    Notes :

    • Do not cook the cake for long time as they become rubbery .
    • Cooking time varies from Microwave oven to Oven .
    • Demerara syrup can be replaced with honey , Dates syrup or Molasses

    PUMPKIN MUFFINS RECIPE | PUMPKIN RECIPES

    Pumpkin muffins are soft moist muffins made with PUMPKIN PUREE , flour and other few ingredients . These are delicious and very healthy too . I found this recipe as a good way to feed pumpkin to my kids as they are picky eaters . Check out the Other Muffins in my blog below .

    Pumpkin Muffins Recipe , Step by Step
    PUMPKIN MUFFINS RECIPE  | PUMPKIN RECIPES


    Ingredients:

    • Pumpkin Puree - 1 1/2 cup ( Click here for the Recipe )
    • All Purpose Flour - 1 1/2 cup
    • Butter - 1 stick , Melted
    • Sugar - 3/4 Cup
    • Baking powder - 1 tea spoon
    • Baking Soda - 1 1/2 tea spoon
    • Egg - 2 numbers
    • Vanilla Extract - 1 tea spoon
    • Raisins - Few ( Optional )

        Pumpkin Muffins Recipe
        PUMPKIN MUFFINS RECIPE  | PUMPKIN RECIPES

        Method :

        Take Some Pumpkin Puree . 

        Pumpkin Puree made in pressure cooker method

         Melt the butter and set aside .


        Beat the two eggs and set aside .


        In a bowl , mix all purpose flour , salt  sugar , baking soda , baking powder and whisk . Make a dent in the middle .


        Add the beaten eggs , melted butter , pureed pumpkin , vanilla Extract and gently fold the wet ingredients to the dry ingredients using a spatula .


        Mix the contents using a spatula .


        Add Some raisins  and fold them .


        Take the muffin Liner and line with the muffin paper , and fill the muffin cups with batter .


        Bake for 15 - 20 minutes and Allow them to cool down , then Serve .


        Yummy Pumpkin Muffins are ready to serve !

        Notes :

        • Butter Could be replaced by Oil or Margraine 
        • Pumpkin Puree could be made at home or bought from Store .

        Banana Mango Muffins

        Banana Mango Muffins is a very easy and a simple recipe . When i was baking the Mango Banana Bread , I put few batter in the muffin tray and my daughter Akshita decorated with some jelly beans .The muffins were Super delicious . This recipe follows the steps as same as the Mango Banana Loaf Off to the recipe .

        Banana Mango Muffins Recipe
        Banana Mango Muffins




        Ingredients:
        •   All Purpose Flour / Maida - 1 1/2 cups
        •   Sugar - 3/4 cup  
        •   Baking powder - 1 tsp
        •   Baking soda - 1 1/2 tsp
        •   Salt - 1/4 tsp
        •   Unsalted butter - 1 stick ( Approx 1/2 cup when melted )
        •   Mashed Banana and Mango Puree - 1 1/2 cup ( I used 3    ripe   banana and 1/2 cup of mango puree )
        •   Eggs - 2 no
        •  Vanilla extract - 1/2 tsp
        • Nuts - Few ( optional )
        • Jelly Beans - optional

        Method:

        Preheat the oven to 350 F . In a  mixer  Puree the banana and Mango together . Set aside .


         Melt the butter and set aside .

        Add the beaten eggs , melted butter , pureed mango and banana  , vanilla Extract and gently fold the wet ingredients to the dry ingredients using a spatula .



         Add the nuts and fold it again .


        Take the muffin Liner and line with the muffin paper , and fill the muffin cups with batter .


         My daughter decorated with some jelly beans , But this is purely optional . Bake for 15 - 20 minutes .  Insert a tooth prick to check if the muffin is fully baked ie the inserted tooth prick comes out clean .


         Allow them to cool down .



        Enjoy this muffin with a cup of chai .

        Vanilla Muffins / How to make Muffins from Scratch Step by Step

        My daughter Akshita loves cakes . She is on a spring break and she asked my husband to bake a cake for her . My husband baked this Vanilla muffin for her and this muffin turned out to be really yummy .This is one of the easiest muffin and a very basic muffin . I was clicking pictures when the recipe was being made  , and off to the recipe now .

        Vanilla Muffins / How to make Muffins from Scratch Step by Step


        Ingredients:

        • Unsalted Butter - 4 tbsp ( 57 gms Or 1/4 cup ) , At room temperature
        • Sugar - 65 gms
        • Vanilla Extract - 1/2 tsp
        • Eggs -  1 1/2 no
        • Milk - 
        • Orange skin crushed ( Orange Zest ) - 1 tsp
        • Salt - 1 pinch
        • Milk - 30 ml
        • All Purpose Flour / Maida - 98 gms
        • Baking Powder - 3/4 tsp

        Vanilla Muffins / How to make Muffins from Scratch .
        Method:

        Keep the butter at room temperature . Seive  together All purpose flour , Baking powder and salt . Preheat the Oven to 350 F . Line the muffin cups with muffin paper liners .
        Take the butter in a bowl and beat it till fluffy .

        Add the eggs , Vanilla Extract and continue to beat .

        Add the sugar and orange Zest and continue to mix . The mixture may look curdled .


        Add the flour and milk alternatively and continue to beating in low speed .



        Scrape down the sides of the  bowl using a spatula and mix well using  a spatula .


        Fill the muffin cups using the batter and bake for 15 to 20 minutes .


        Insert the tooth prick to check if it comes out clean . Cool them .


        My Kid Akshita was very excited to eat is as soon as it was out from the oven . She loved it .

        Banana Mango Loaf cake / Banana Mango Bread / வாà®´ைப்பழம் à®®ாà®®்பழம் கேக்

        This is one of my draft which i wanted to post a long time ago . I made this loaf after i made the Banana cake which was a huge hit . This cake is a Mango banana combo . The overall result was really good . I made a loaf and few cup cakes from the batter . For now I shall post the Mango Banana loaf Pics and recipe . So now coming on to the recipe . Here it goes .

        Banana Mango Loaf  Cake / வாà®´ைப்பழம் à®®ாà®®்பழம் கேக்


        Ingredients:
        •   All Purpose Flour / Maida - 1 1/2 cups
        •   Sugar - 3/4 cup  Baking powder - 1 tsp
        •   Baking soda - 1 1/2 tsp
        •   Salt - 1/4 tsp
        •   Unsalted butter - 1 stick ( Approx 1/2 cup when melted )
        •   Mashed Banana and Mango Puree - 1 1/2 cup ( I used 3 ripe banana and 1/2 cup of mango puree )
        •   Eggs - 2 no
        •   Vanilla extract - 1/2 tsp
        • Nuts - Few ( optional ) 


        Method:

        Preheat the oven to 350 F . In a  mixer  Puree the banana and Mango together . Set aside .


         Melt the butter and set aside .

        Beat the two eggs and set aside .




        In a bowl , mix all purpose flour , salt  sugar , baking soda , baking powder and whisk . Make a dent in the middle .


        Add the beaten eggs , melted butter , pureed mango and banana  , vanilla Extract and gently fold the wet ingredients to the fry ingredients using a spatula .



         Add the nuts and fold it again .


        Take a bread loaf , and pour this mixture in to it and Bake for 35 to 40 minutes .


          Insert a tooth prick to check if the cake is fully baked ie the inserted tooth prick comes out clean . Slice it up .
