 Fish Fry / Tilapia Fish fry


Ingredients:
  • Fish - Any fish Cut in thin slices or fillets (I used tilapia fish)
  • Red chilli powder-2 tsp
  • Turmeric powder - 1/4 tsp
  • Corn flour - 1/2  tsp
  • Curd - 2 tsp
  • Oil - For Frying
  • Salt   As per taste

Preparation:

How to Choose fresh fish  :

We generally buy fish from Asian market.To check for fresh fresh,
Look at the gills. They should be a rich red. If the fish is old, they will turn the color of faded brick.

Method:

 Take the cleaned fish or fillets in a bowl / Plate .



Add red chili powder , turmeric powder , curd , corn flour salt,mix well.


Coat the fish with masala well.

Leave it aside for an hour.
Heat oil in kadai,drop the fish pieces in oil .

Cook on both sides till it turns golden brown in colour.
Serve hot with steamed rice.

Rasam ( Soup ) Recipe | How to make Rasam Recipe ( Tamarind Soup ) , No Rasam Powder

Tamarind rasam is a tangy south Indian soup that pairs well with rice .Tamarind  rasam is made in a similar way as the Lemon rasam . This is a very simple and a easy recipe made within 15 minutes . So now off to today's post Tamarind rasam Recipe .

Tamarind Rasam -Ingredients

Preparation Time :5 minutes  | Cooking Time : 10 minutes
Recipe Category: Soup | Recipe Cuisine: South Indian

  • Tamarind - 1 lemon size
  • Water
  • Salt - As per taste
To Grind:
  • Tomato - 1 number , chopped
  • Garlic  - 3 pods
  • Red chilli  - 1 number
  • Cumin seeds - 1 teaspoon
  • pepper corns - 1/2  teaspoon
  • Cilantro Leaves  / Coriander leaf  - few 
  • Curry Leaves - 1 spring

Tempering:
  • Oil - 1 teaspoon
  • Mustard seeds  -  1/2 teaspoon
  • Methi seeds - 1/4 teaspoon
  • Red chilli -1 number

Preparation:

  • Soak tamarind in water for 15 minutes and make tamarind juice extract from the pulp.The tamarind juice should not be too thick.It should be watery.
  • In a mixer , add garlic , red chili, cumin seeds, pepper corn , cilantro leaves , curry leaves   and tomato and make a fine paste.

  • Heat oil in kadai, add mustard,methi seeds, red chilli, and  allow it to crackle .After this add the ground paste from the mixer and allow it to cook till the raw smell goes away.

  • Now add the tamarind juice to the kadai.

  • Cook in medium flame and Turn off once the bubbles are formed on the surface.


  • Garnish with coriander leaves.Add salt.


  • Serve hot with steamed rice and hot papads or have a bowl of this Tamarind soup piping hot ( My dad loves to have it this way ) . Nothing could beat this taste  Yummy Rasam is ready .

Adai Recipe | Adai dosa | அடை (Lentil Crepes Recipe )

Adai Recipe
Adai Recipe /  Lentil Crepes Recipe / Adai dosa / அடை

Ingredients:

  • Raw rice - 1 / 2 cup
  • Boiled rice / Idly rice - 1 / 2 cup
  • Channa dal / Kadalai paruppu - 1 / 4 cup
  • ( Urad Dhal + Toor Dhal + Moong Dhal ) - 3 / 4 cup
  • Red chilli -2 nos
  • Salt-As per taste

Tempering:
  • Oil- 2 tsp
  • cumin seeds - 1 tsp 
  • Green Chilli - 1 no
  • Mustard seeds - 1 tsp
  • Urad dhal - 1 tsp

Method:

Take the rice and dhals and red chilli .


Wash them and Soak them for 3 hours in water .


In the mixer add soaked rice and grind it well with some water .


Now add all the dhals , red chilli , little salt  in the mixer and grind it in to a coarse paste.

The batter should be thicker and coarser than the dosa mixture


Heat oil in a kadai and add the mustard seeds and allow it to splutter ,add the green chilli and urad dhal and fry .


Transfer this to the batter and mix well.


Heat the tava pour a ladleful of the batter and spread it.



 Drizzle some oil on the sides and flip over when it is golden brown.


Serve with chutney



 Enjoy this healthy adai .


Note:

The rice used for grinding can be reduced to ( 1/4 cup of raw rice + 1/4 cup of Boiled rice ) and made Diabetic Friendly Adai  .



Tandoori Cauliflower/Tandoori Meal maker

Tandoori Cauliflower

Ingredients:
Cauliflower -1 (Cut in to med size florets)
Meal maker(Soaked in water for 1/2 hour) Drain water and squeeze out the water
Ginger garlic paste-4 tsp
Yogurt-4 tsp
Lemon juice- 2 tsp
Paprika powder- 1 tsp(It gives the natural red color)
Chilli powder- 2 tsp
Coriander powder- 2 tsp
salt-As per taste


Preparation:
In a large bowl, add cauliflower florets and meal maker add the ginger garlic paste, yogurt, lemon juice, paprika, red chili and coriander powder and salt and mix well .Leave it aside for an hour or so, so that the masala gets well in to the vegetable.
Turn on the tandoori oven and set the temperature to 375 F and set in broil mode and preheat the oven.
Arrange the cauliflower and meal maker in the baking pan on the grill.
Cook it slowly for about 45 mts, by turning the sides of the florets and meal maker now and then.
After it is fully cooked(as shown in pic), turn off the oven.

Serve it with onion slices,lemon and mint / tamarind chutney or with tomato sauce.

This recepie is very healthy as we do not use oil.

Indo chinese vegetable noodles


Indo Chinese vegetable noodles



Ingredients:
Carrots,Beans,Cauliflower,Spring onions,cabbage-1 cup(Very small pieces)
Garlic pods-10-12 no(cut very small)
Green chilli-3 nos
Red chilli- 3 nos 
Oil- 4 tsp
Soy sauce-1 tsp
Salt-As per taste
Ajinamotto- 1 tsp
Sugar-1/2 tsp
Noodles-200 gm
Water

Preparation:
In a pan bring water to boil, add salt and 1 tsp oil ,add 200gms noodles and allow it to cook until soft.Drain water and allow it to cool.Set aside
In a pan,heat 2 tsp oil add garlic, green chilli (cut very small),add the vegetables and add little salt and stir.The vegetables should be crunchy.
Add noodles to the vegetables and stir and cook in medium heat.Now add ajinamotto, sugar, soy sauce to the mixture and stir.
In another pan, add little oil, add the whole red chili fry the red chili in low flame till the red chili turns dark brown.Filter the oil.
Transfer this oil in to the noodles and cook in medium heat.
Now the tasty Vegetable noodles is ready.
Serve this with hot sauce.





 

Yogurt curry / more kulambu / மோர் குழம்பு

 
Yogurt curry / more kulambu / மோர் குழம்பு


Ingredients:
  • Any vegetable of your choice ( I used squash for this recipe ) - Diced
  • Yogurt - 1 cup beaten in blender or mixer
  • Turmeric powder -1 pinch
  • Salt - To taste
To Grind: 

  • cumin seeds -1tsp
  • Green chilli - 2 no
  • Grated coconut - 1/2 cup 
 
For Tempering:


  • Mustard seeds - 1 tsp
  • urad dal  - 1 tsp
  • Red chilli -2 no
  • onion -1 no , sliced

Method :
 
In a pan bring water to boil and  add turmeric,salt  the vegetable as per your choice and allow it to cook 60% .
 
 
In a mixer add  grated coconut,cumin seeds, green chili and make a paste by adding little water . Set aside.
After the vegetable is cooked 60%, transfer the ground paste to the vegetable and allow it to cook till the raw smell is  gone.
 
 
Now add  the beaten yogurt and cook in slow flame till some bubbles are formed .Do not stir after adding yogurt to the mixture
Last step is tempering.In a small pan add 2 spoons of oil ,then add mustard ,urad dal , red chill and onions and fry till onion become soft .
 
 
 Transfer these contents to the gravy.Do not mix .
 
Yougurt curry / Moor kulambu
Serve this with hot steaming rice .
