Homemade Garlic Bread / Garlic Bread Recipe

Garlic Bread Recipe / Homemade Garlic Bread
Ingredients:

Bread Slices - 6 no
Dried or Fresh Parsley leaves - 1 tsp
Thyme leaves Fresh or Dried - 1 tsp
Butter / Magraine / oil - 2 tbsp
Garlic pods - 1- pods , minced
Salt - to taste

Method:

 In a mixing bowl add the thyme leaves , parsley leaves , butter , garlic , salt and mix well .



 Slit the bread slices in to two halves .


Spread this mixture on the bread slices . Preheat the oven to 375F .


Bake for 5 minutes or till the bread turns slight golden brown in color .

 

 If using Tawa instead of oven , Cook in a tawa till slight golden brown color . Serve hot .


Enjoy this with the cup of tea or coffee .

Mochakottai Kulambu / Lima Beans Curry / Mochakottai Kulambu - No Coconut Method

I had a packet of this mochakottai lying in my grocery cupboard  for a long time which i got from India  . The close name to mochakottai in english is Lima Beans. I generally make curry out of it . My mom often makes this curry without the addition of coconut milk , so I tried my moms version of this curry . Of to the recipe now.

Mochakottai Kulambu  / Lima Beans Curry / Mochakottai Kulambu - No Coconut Method
Ingredients:

Mochakottai  / Lima bean seeds / Dried Lima beans- 1 cup
Brinjal - 1 no , diced
Drumstick - 1 no, chopped
Tomato - 1 no , chopped
Onion - 1 no , chopped
Sambar Powder - 2 tsp ( Can be substituted with red Chilli powder + Coriander powder in 1:1 ratio)
Turmeric Powder - 1/4 tsp
Oil - 2 tsp
Mustard Seeds -  1 tsp
Urad dhal - 1 tsp
Tamarind juice - 1/4 cup
cooked dhal - 1/2 cup ( I used toor dhal ) any dhal could be used .
Salt - to taste

Method:

Dry roast the mochakottai in a pressure cooker till it turns golden brown in colour .


Add some water to it and pressure cook for 4 hisses .


Open the pressure cooker . Filter the excess water if any . Set aside .


Heat oil in a wok , add the mustard seeds and allow it to pop . Now add the urad dhal and fry till it turns brown in colour . Now add the onions and tomatoes and cook till it become soft .


Add the brinjal , drum sticks , Sambar powder , hing , salt and turmeric powder and give a stir .


Now add the Tamarind juice and bring the contents to boil .


Add the Cooked dhal to it and mix .


Transfer these contents to the pressure cooker along with the cooked Mochakottai , and pressure cook all the contents  for only oneWhistle .


Serve hot .


Enjoy this gravy with steamed rice and Papads.

Plum Banana Yogurt Smoothie / Plum Banana Lassi
Ingredients:

Plum - 1 no , skin out and chopped
Banana - 1 no , Skin out and Chopped
Yogurt / Curd - 1/2 cup , beaten
Milk - 1/2  cup
Sugar - 2 tsp ( Optional )

Method:

In a blender add plum, banana , and yogurt and blend it well .



 Now add the sugar ,milk and blend again .


Serve Chilled .


Enjoy this on a hot day!


VENDAKKAI KOVAKKAI VARUVAL | OKRA GHERKIN FRY


I had few Vendakkai ( Okra ) and some Kovakkai ( Gherkin / Ivy gourd ) left over from last week grocery shopping , So this recipe was born with the Combo of those two Vendakkai and Kovakkai by cooking with Yogurt ( Curd ) . I have already Posted Kovakkai ( Gherkins )  Varuval here , and Vendakkai ( Okra ) Varuval here and here   So off to today's Post


Fried Vendakki and Kovakkai cooked in yogurt
VENDAKKAI KOVAKKAI VARUVAL | OKRA GHERKIN FRY


  Ingredients:


  • Okra / Ladies finger / Vendakkai - 10 number , Sliced
  • Ivy gourd / Kovakkai - 15 number ,  sliced
  • Yogurt - 2 tablespoon , beaten
  • Onion - 1 number , chopped
  • Oil - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Urad dhal - 1/2 teaspoon
  • Red Chilli powder - 2 tea spoon
  • Turmeric Powder - 1/4 teaspoon
  • Salt - to taste

Method:


Heat oil in a wok , add oil , add the mustard seeds and allow it to pop . Now add the urad dhal and fry till it turns brown .Now add the onions and fry till they become translucent .


Add the Sliced Vendakkai ( okra ) and Kovakkai ( Ivy gourd / Gherkin ) , turmeric powder  , red chilli powder , and salt and Mix .


Now add the Yogurt ( Curd ) and Mix .



The Vegetables will get cooked in the yogurt, so do not add water .Fry till they turn golden brown in color .

Enjoy this with Steamed rice and curry of your Choice .

Note :
  • The yogurt could be skipped and water could be sprinkled  if you want to make the  dish Vegan .

Capsicum Fried Rice / Stir Fry bell peppers with Rice

My kid was craving for fried rice . I had few left over rice and had a bell pepper in my home that i plucked from my patio garden and made this quick recipe for my kid . It was prepared in less than 15 mts . Now off to the recipe

Ingredients:

Cooked Rice ( left over rice ) - 2 1/2 cups
Bell Peppers  - 1 no , diced
Pepper powder - 2 tsp
Green Chilli Sauce - 1 tsp
Soy sauce - 1 tsp
Ajinamotto - 1/2 tsp
Salt - to taste
Cruched Garlic pods - 4 pods
Oil - 1 tbsp



Method:

Heat oil in a wok . Add in the crushed garlic and fry till the raw smell goes away . Now add the chopped bell pepper , salt and fry till it is half cooked . The bell peppers should be crunchy .


At this point add the left over cooked rice  , green chilli sauce , soy sauce , ajinamotto , pepper powder and stir .


Mix well and keep stirring for few minutes .


Serve hot .


Enjoy with hot sauce !

Potato is one of my favorite vegetable .  I made this as a side dish to poori . My family loved this Potato Bhaji ( Aloo Bhaji ) it a lot . Ingredients:

  • Boiled potato - 3 no , Diced
  • Onion - 1 no , Chopped
  • Tomato - 1 no , chopped
  • Green Chilli - 3 no , slit
  • Turmeric Powder - 1/2 tsp
  • Oil - 1 tbsp
  • Mustard seeds - 1 tsp
  • Urad dhal - 1 tsp
  • Salt - to taste

Method:

Heat oil in a heavy bottom pan , add the mustard seeds  , allow it to pop . Now add the urad dhal and fry till it turns brown . Add the chopped onion and fry till it become translucent . Add the tomatoes and slit chilli's and cook till the tomatoes become soft .


Add the boiled potatoes , turmeric powder and salt.


Sprinkle little water .Cover with the lid and cook for few minutes OR pressure cook the contents for 1 hisses .I pressure cooked the contents .


Open the pressure cooker and if u find excess water allow it to cook till the water evaporates .


Serve hot . Yummy Potato Bhaji ( Aloo Bhaji ) is ready to serve .

CHANA MASALA | CHOLE MASALA | EASY SIDE DISHES

Channa Masala or Chole Masala  is a famous side dish that goes well with roti , parthas , Naan. Check out my other Chickpea recipes Biryani Chickpea Wrap , Chickpea potato masala , Chole Masala and a chickpea Stir-Fry .

Easy side dish for roti , bathure , Naan
CHANA MASALA | CHOLE MASALA | EASY SIDE DISHES

Ingredients:

  • Chickpeas / Kondakadalai / Chole - 400 gms ( Soaked overnight )
  • Some whole Garam Masala spices .( Bayleaf + cloves + cinnamon)
  • Onion - 2 no ,minced Or Pureed
  • Tomato - 2 no , Pureed
  • Ginger Garlic Paste - 2 tbsp
  • Chilli Powder -  2 tsp
  • Garam Masala powder - 2 tsp
  • Turmeric Powder - 1/4 tsp
  • Kasthoori Methi Powder  / Dried Fenugreek leaves- 1 tsp
  • Salt - to taste
  • Oil - 2 tbsp
  • Lime juice - 2 tsp



Method:

Pressure cook the soaked chickpeas in pressure cooker for 1 whistle.  Filter the water . Cool off .


Heat oil in a wok . Add the whole garam masala spices and fry . Now add the ginger garlic paste  and cook till the raw smell goes away .



Add the minced onions or pureed onions  and cook till they become translucent .


Now add the pureed tomatoes , Red chilli powder , garam masala powder , turmeric powder , salt and bring the contents to a boil .


 Add the pressure cooked  chick peas and cook till the water evaporates and the gravy becomes thick .



Now add the Kasthoori Methi powder and squeeze out the lime juice and give a stir . Cook in low flame till the oil separates out from the curry .


Serve hot with Bathure , poori , chapathi , steamed rice .

Onion Tomato Masala / Thakali Vengayam vathakal
Ingredients:

Tomato - 3 nos , Chopped
Onion - 2 nos , chopped
Chilli powder - 2 tsp
Turmeric powder - 1/4 tsp
Oil - 2 tsp
Mustard seeds - 1 tsp
Urad dhal -1 tsp
Salt - to taste

Method:

Heat oil in a wok . Add the mustard seeds and allow it to pop . Now add the urad dhal and fry till it turns brown in colour.


Add the onions and cook till they become translucent .


Now add the tomatoes ,  turmeric powder , chilli powder , salt and cook till the tomatoes become soft .


Cook till the water evaporates from the gravy .


Serve hot . It is a very easy side dish prepared in less than 10 minutes .


Enjoy this with roti , poori , Idly and dosai .
