Baby corn 65 is a quick appetizing recipe that is loved by kids and grown ups off all ages . I have tasted these baby corn in the restaurants  and I loved them . so now off to today's post baby corn 65 recipe .

Baby corn 65 - Ingredients

Preparation Time:10 minutes | Cooking Time : 10 minutes
Recipe Category: Starter | Recipe Cuisine: Indian

  • Baby corn-10 numbers , chopped in to round slices
  • Corn flour - 1/2 teaspoon
  • Channa dal flour or gram flour - 1/2 teaspoon
  • Salt - to taste
  • Red chili powder - 1 teaspoon
  • Oil-frying

    Method :

    • In a mixing bowl, add the sliced baby corn,  corn flour,   channa dal flour, red chili powder, and salt .


    • Sprinkle little water and mix them well .Set  aside for 1/2 an hour.


    • In a shallow frying pan, heat oil. Drop the marinated baby corn and deep fry till it turns brown in colour.


    •   Serve hot with sauce. Baby corn 65 is ready !

    SAKKARAI PONGAL | SWEET PONGAL RECIPE

    Sakkarai Pongal or Sweet Pongal is a traditional Indian recipe made during the festive seasons in India . The sweetness to the Pongal is derived by using jaggery . So now off to today's post Sakkarai Pongal or Sweet Pongal Recipe

    Sakkarai Pongal - Ingredients


    Preparation Time :5 minutes  | Cooking Time : 15 minutes
    Recipe Category:
    Dessert  | Recipe Cuisine: South Indian 
    • Raw Rice | Pacharisi - 1/2 cup , washed
    • Jaggery | Vellam - 1/2 cup , broken
    • Milk - 1 cup
    • Water - 1 cup
    • Ghee - 2 tablespoon ( Click here for the recipe )
    • Raisins  - Few

      Method :


      • Take the pressure cooker , Add the washed rice , water and Milk .  Cover with lid and pressure cook them for 4 hisses .


      • Once the pressure releases , Open the lid of the pressure cooker and Mash them up with a spatula .



      • Take the broken jaggery in a kadai . Add some water just to immerse them . Melt them .


      • Now add the mashed rice to the jaggery and Mix .



      • Mix them well .



      • Melt some Ghee in a different pan . Add the raisins and allow them to pop .



      • Transfer them to the Sakkarai Pongal .


      • Mix them well and the Sakkarai pongal will start leaving the edges of the pan . 


      • Delicious Sakkarai Pongal is ready to be served .
      Notes :

      • Adding Milk  can be substituted  . Replace the milk quantity with water
      • Ghee can be replaced by  Oil .
      • Fried cashew can be added to the Pongal when serving .

      VEGETABLE KOLA URUNDAI | VEGAN MEAT BALLS

      Vegetable Kola Urundai or Vegan Meat balls is made using the Green Banana and some flavorful spiced ingredients . This recipe is made in a similar way to the Mutton Kola Urundai that i have posted here . So now off to today's post Vegetable Kola Urundai Recipe or Vegan Meat Balls .

      Vegan Meat Balls ( Kola Urundai )- Ingredients 

      Preparation Time : 15 minutes | Recipe Category: Snacks
      Cooking Time : 10 minutes | Recipe Cuisine : South Indian

      • Raw Green Banana  -3 to 4 numbers
      • Green Chilli - 2 numbers , Very finely chopped
      • Ginger Garlic paste - 1 teaspoon ( click here for the recipe )
      • Mint Powder  -1/2 teaspoon ( Click here for the recipe )
      • Garam Masala Powder - 1/2 Teaspoon
      • Roasted Channa Dal powder - 1 tablespoon
      • Salt - To Taste
      • Oil - For Frying
         

         

        Method :


        • Take the Raw Green Banana in a pressure cooker . Fill the cooker with some water . Cover with the lid and pressure cook the contents for 3 -4 hisses . 



        • Cool them . Remove the skin of the cooked banana . Mash them well . 



        • Add the roasted channa dal powder and bind them well .


        • Make tiny balls of the dough .


        • Heat oil . Drop them in oil and fry till they become golden brown in color .


        • Done !  Kola Urundai (Vegan Meat  Balls ) is ready to serve .  My kids absoultely loved these  Kola Urundai ( Vegan  Balls ) .

        THAKKALI KUZHAMBU | EASY TOMATO CURRY

        Thakkali Kulambu ( Kuzhambu ) is a simple and a quick curry that goes well with steamed Rice , Rotis or Idli dosa Recipes . This recipe calls for few ingredients . Thakkali Kulambu can be made in a jiffy . So off to todays Post Easy Tomato Curry Recipe .

        THAKKALI KUZHAMBU | EASY TOMATO CURRY

        Tomato Curry - Ingredients

        Preparation Time : 10 minutes  | Cooking Time : 30 minutes
        Recipe Cuisine:
        South Indian  | Serves : 4 


        • Tomato ( Thakkali ) - 2 numbers
        • Onion - 1 number , Chopped
        • Oil - 1 teaspoon
        • Mustard seeds - 1/2 teaspoon
        • Urad dhal - 1/2 teaspoon
        • Sambar  Powder or Curry Powder - 2 teaspoon  ( Click here for the recipe )
        • Turmeric Powder - 1 teaspoon
        • Salt - To taste

        To Grind

        • Cumin seeds - 1/2 teaspoon
        • Coconut - 1/2 cup , chopped
        • Water - As needed

        Method :


        • Take a heavy bottom pan and  fill with water , add the tomatoes . Bring them to a boil.


        •  Allow the tomato to cool down a bit . chop them roughly . Take the chopped pieces in a blender and puree them .


        • Take the chopped coconut slices , cumin seeds and some water in a blender .


        • Puree them and set aside .

        • Heat a heavy bottom vessel or a kadai . Add oil . Now add the mustard seeds and urad dhal and allow them to spultter . Now add the chopped Onion . Fry till they become translucent .


        • Add the curry Powder or Curry Powder ,  salt , Turmeric powder and mix .



        • Now add the pureed tomato and bring them to a boil  . Cook till the raw smell goes away .

        • Now add the ground coconut paste and bring them to a  boil .



        • Cook till the oil separates out from the curry .


        • Delicious Thakkali Kulambu is ready to serve .



        Note :

        • Red Chilli Powder and Coriander powder in a ratio 1:1 that is one tea spoon of red chilli powder and one tea spoon of coriander powder  could be substituted for Curry Powder  .

        KARAMANI VADAI | BLACK EYED PEAS VADA | LOBIA FRITTERS

        I had some Left over Black eyed Peas or Karamani after making this Black eyed peas curry or Karamani kulambu . Hence I made these Vadas or Fritters are made with the Black eyed Peas . They tasted somewhat similar to the Lentil Vada or Paruppu Vadai recipe . My kids loved these Vada and they are healthy too . So now Off to today's Post Karamani Vadai Or Black Eyed Peas Vada Recipe or Lobia Fritters .

        Karamani Vada ( Lobia Fritters ) - Ingredients

        Preparation Time :12 Hours  | Cooking Time : 10 minutes
        Recipe Category:
        Starters  | Recipe Cuisine Indian 
        • Black Eyed Peas / Karamani / Lobia  - 1 cup
        • Ginger - 1' piece
        • Garlic - 2 pods
        • Green Chilli - 2 numbers
        • Roasted Channa dal powder - 1 tablespoon
        • Onion - 1 number , chopped Finely
        • Salt - To taste
        • Oil - For Frying

          Method :

          • Take the Black Eyed Peas in a bowl . Wash them well and Soak them in water overnight .


          • Drain the water and take the soaked Black eyed peas in the blender . Add the Ginger , garlic , salt .  and grind them to a coarse paste by sprinkling little water .


          • Grind them to a coarse paste by sprinkling little water .


          •  Take the ground Paste to a bowl and add the roasted Channa dal powder and mix .


          • Add some chopped onion and Mix them well .


          • Heat oil for Frying . Make small lemon size balls of the vada and pat them between your palm and slide them in oil . Fry them till they turn golden brown in color .



          Karamani Vada or Lobia Fritters are ready to be served . Enjoy this  Vada with some Juice or a Chai ( Tea ) in the evening .

          SORAKKAI KOOTU | BOTTLE GOURD CURRY

          This is a simple and a quick curry made with Sorakkai AKA Bottle gourd with some authentic Indian ground masala and spices . Any squash could be used if you cant find a Bottle Gourd . This Sorakkai Kootu pairs well with Steamed Rice and roti recipes . So now off to Today's post Sorakkai Kootu or Bottle gourd Curry Recipe .

          SORAKKAI KOOTU | BOTTLE GOURD CURRY 

          Sorakai Kootu - Ingredients

          Preparation Time : 10 minutes  | Cooking Time : 30 minutes
          Recipe Cuisine:
          South Indian  | Serves : 4 

           

          • Channa dal - 1 cup
          • Sorakkai or Bottle gourd  - 1 number , Skin Out and Diced
          • Tomato -1 number ,  chopped
          • Onion -1 number ,  chopped
          • Hing -1 pinch
          • Curry Powder -1tablespoon ( Click here for the recipe )
          • Turmeric powder - 1 pinch
          • Water - As needed
          • Green Chilli - 1 number , Slit
          • Salt-to taste

          To Temper :

          • Oil - 1 teaspoon
          • Mustard seeds - 1/2 teaspoon
          • Urad dal - 1/2 teaspoon
          • Coriander leaves - Few , Chopped ( Optional ) 

          To Grind :

          • Coconut - 1/2 cup , grated
          • cumin seeds - 1 teaspoon
          • water - As needed


               

              SORAKKAI KOOTU | BOTTLE GOURD CURRY 

               

              Method :

              • Skin out the bottle gourd aka sorakkai and dice them in to cubes .


              • Take the grated coconut and cumin seeds in a blender . Grind them in to a paste  by adding water and set aside .


              • In a pressure cooker add the channa dal, tomato,onions,squash,turmeric powder , Curry powder ,and hing .

               

              • Add some water and mix .
               

              •  Cover with the lid and pressure cook the contents  for 2 hisses .
              • Now add the Ground Coconut and Cumin paste and bring the contents to a boil . 
              • In a pan add oil,  add the mustard seeds and allow it to pop ,add urad dal , and coriander leaves and allow it to sizzle .
               


              • Transfer the tempered contents to the pressure cooked contents , add salt and mix-well .
               

              • Done !


              • Yummy Sorakkai Kootu Or Bottle gourd curry is ready to be served . This Bottle gourd Curry or Sorakkai kootu could be served with Steamed Rice , Idly , Dosa , Parathas .

              Note :

              • Red Chilli Powder and Coriander powder in a ratio 1:1 that is one tea spoon of red chilli powder and one tea spoon of coriander powder  could be substituted for Curry Powder  .
