MILAGU MUTTAI VARUVAL | PEPPER EGG ROAST RECIPE | EGG RECIPES

Pepper Egg Roast Or Milagu Muttai Varuval in Tamil is a quick and simple recipe made in a jiffy . The turmeric and Pepper used in this Recipe " Milagu Muttai " or Pepper Egg Roast  is very good for the treatment of common cold . My husband dhinesh had cold and I made this recipe and he felt much better . So now off to today's post Milagu Muttai Varuval or Pepper Egg Roast  recipe .

Pepper Egg Roast - Ingredients 

Preparation Time :10 minutes  | Cooking Time : 10 minutes
Recipe Category: sides | Recipe Cuisine: South Indian

  • Boiled Egg - 4 numbers , Slit in halves 
  • Turmeric Powder - 1 teaspoon
  • Oil - 2 teaspoon

To Grind :
  • Pepper Corns - 1 teaspoon
  • Garlic - 3 pods 
  • Fennel seeds - 1/2 teaspoon
  • Cumin Seeds - 1 teaspoon
  • Salt - To taste

    Method :

    • Grind all the contents under the " To Grind " table in to a coarse powder . Set aside .
    • Heat oil in a wok . Add the turmeric powder and let it stand for few seconds .


    • Add the ground powder to the oil and fry till the raw smell goes away .


    • Now add the slit boiled egg to the wok and cook them well till the Milagu or Pepper sticks to the Eggs .


    • Milagu Muttai or Pepper Egg roast is ready to be served .

    • Serve this Milagu Muttai or Pepper Egg with some Steamed rice and Spicy hot rasam . This recipe works like a charm for treating common cold .

    GINGER CHICKEN RECIPE | HOW TO MAKE GINGER CHICKEN -INDIAN STYLE

    Ginger Chicken is a simple and a tasty recipe made with ginger , chicken and few other spices . This recipe , Ginger Chicken is made in an Indian way with other spiced flavours . So now off to today's recipe Ginger Chicken Recipe -Indian Style .

    Ginger Chicken - Ingredients 

    Preparation Time :10 minutes  | Cooking Time : 20 minutes
    Recipe Category: Sides | Recipe Cuisine:  India

    • Onion - 1 number , chopped
    • Green Chilli - 2 number , slit
    • Tomato Puree - 1/4 cup
    •  Red chilli powder - 1 teaspoon
    • Grated ginger - 1 teaspoon
    • Salt - to taste
    • Oil - 2 teaspoon

    To Marinate :

    • Chicken - 250 Grams , Cleaned and chopped
    • Turmeric Powder - 1 teaspoon
    • Ginger paste - 1 teaspoon 
    • Salt - To taste

      Method :

      • In a shallow bowl , add the chicken , Turmeric powder , salt and Ginger Paste . 


      • Mix Them well . Set aside for 30 minutes .
      • In a heavy bottom pan , heat oil . Add the Onion , green chilli and cook till they become translucent .


      • Now add the tomato puree , salt and red chilli powder and cook till the raw smell goes away .


      • Now add the marinated chicken and toss them well .


      • Add some water till the chicken pieces are submerged. Bring the contents to a boil .


      • Now add the grated ginger pieces .


      • Cook till the oil separates out from the ginger Chicken recipe .



      Notes :

      This Ginger chicken can also be made dry recipe by cooking the chicken till all the water content evaporates .

      CHETTINAD CHICKEN SUKKA ( CHUKKA ) VARUVAL | CHETTINAD CHICKEN MASALA RECIPE

      My husband Dhinesh is an ardent fan of chicken . He loves to eat chicken recipes . I try to cook chicken with different flavors . Today's post Chettinad Chicken Sukka is a simple recipe that is  made in a similar way as Mutton Sukka Recipe  is made . So now off to Today's post Chettinad Chicken sukka Varuval recipe .

      Chettinad Chicken Sukka Recipe
      CHETTINAD CHICKEN SUKKA ( CHUKKA ) VARUVAL | CHETTINAD CHICKEN MASALA RECIPE



      Ingredients:

      • Chicken  - 250 Grams , Skin out and Chopped
      • Onion - 2 numbers , Chopped
      • Tomato - 1 number , chopped
      • Ginger Garlic Paste - 1 tablespoon ( Click here For the Recipe )
      • Red Chilli Powder - 2 tea spoon
      • Coriander Powder - 1 tea spoon
      • Turmeric Powder - 1/ 4 teaspoon
      •  Oil - 1 table spoon
      • Whole Red chills - 2 numbers , split 
      • Fennel Seeds ( Sombu ) - 1 tea spoon .
      To Grind :

      • Grated Coconut - 1/2 cup
      • Cumin Seeds - 1 teaspoon
      • Water - As needed



       Chettinad Chicken Sukka Recipe

      Method:

      • Grind the grated Coconut and cumin seeds in a mixer grinder and grind them in to a paste by adding little water . Set aside .

       

      • Take the pressure cooker . Heat oil .  Add the fennel seeds and fry for few seconds . Add the ginger garlic paste and fry till the raw smell goes away . Now add the chopped onions and whole red chills . Cook till the onion become soft . 

       

      • Add the chopped Chicken Pieces and mix well  till the chicken becomes little white .


      • Now add the spice Powders like Turmeric powder , Red chilli Powder , Coriander powder  and salt . Mix well .  


      • Cook till the raw Masala smell goes away . Now add the chopped tomato and cook till the tomato become soft .


      • Now add the ground coconut and cumin seeds paste .


      • Cover and cook till the oil separates out from the chicken and also the gravy becomes thick . Chettinad Chicken Masala is getting ready !

      MUTTON SUKKA ( CHUKKA ) VARUVAL | MUTTON MASALA

      Mutton chukka Varuval is a very famous Chettinad Recipe that is served in almost all the Non Veg Restaurants in Tamil Nadu . This recipe is inherited to me through my Mom . I have already Posted A Mutton Pepper fry recipe earlier . check out the Recipe by clicking here .       Easy Mutton Masala  Recipe with step wise pictures

      Ingredients:

      • Mutton ( Lamb Or Goat ) - 250 Grams , Chopped
      • Onion - 2 numbers , Chopped
      • Tomato - 1 number , chopped
      • Ginger Garlic Paste - 1 tablespoon ( Click here For the Recipe )
      • Red Chilli Powder - 2 tea spoon
      • Coriander Powder - 1 tea spoon
      • Turmeric Powder - 1/ 4 teaspoon
      •  Coconut Milk - 1 cup
      • Oil - 1 table spoon
      • Whole Red chills - 2 numbers , split 
      • Fennel Seeds ( Sombu ) - 1 tea spoon .
      • Salt - To Taste

      Tempering :

      • Oil - 1 table spoon
      • Curry Leaves - 1 spring
      • Cilantro Leaves - Few leaves , chopped

          Method:


          Take the pressure cooker . Heat oil .  Add the fennel seeds and fry for few seconds . Add the ginger garlic paste and fry till the raw smell goes away . Now add the chopped onions and whole red chills . Cook till the onion become soft .


          Now add the tomatoes and cook till they become soft .


          Add the chopped Mutton Pieces and the spice Powders like Turmeric powder , Red chilli Powder , Coriander powder  and Salt .Mix well .


          Now add the Coconut Milk . ( I used the ready made coconut powder to make this coconut milk . Please refer the notes section for more information )


          Cover with the lid and pressure cook the contents for 5 hisses or till the meat is tender . Now open the cooker and allow the excess water to evaporate till the contents become Semi dry .  Once the Gravy starts to become thick ,  Lets do the tempering . Heat the oil in a heavy bottom pan . Add the curry leaves and cilantro leaves .

          Nice aroma comes from the curry leaves . Now transfer this tempered contents to the gravy and mix well .Cook till the oil separates out from the gravy .


          Yummy Mutton Masala is ready !

          This recipe goes well with Naan Recipe and also with the flat breads and steamed rice .

          Notes :


          • Instead of using Coconut milk , Fresh coconut can be grinded with water and added directly to the gravy . Use about 1/2 cup of grated coconut  to make the fresh milk .

          Green Chilli Chicken - Step by Step Pictorial

          We cook chicken at least once a week . My husband is a great fan of  chicken . Check out my Chicken recipes by pressing here . Coming to Today's recipe , Its a Green chilli Chicken recipe . Its a very simple recipe and made in 30 minutes . Off to the recipe now .

          Spicy green chilli chicken recipe


          Ingredients:

          • Chicken Breast - Boneless & Skinned out , 500 Gm ( Cleaned and Chopped )
          • Onion - 250 Gm , Sliced
          • Green Chilli - 6-8 numbers Or More depending on Spice level
          • Ginger garlic paste - 1 tbsp
          • Salt - to taste
          • Oil - 1 tbsp



          Method: 

          Heat oil in a shallow pan , add the onions and fry till they become translucent .


          Add the cut chicken breast pieces , salt and fry till the chicken becomes white in colour .


          Now add the Ginger garlic paste , green chilli , Turmeric powder and mix along .


          Cook well till the raw smell goes away , and that chicken becomes tender and oil separates from the gravy .


          Yummy Green chilli chicken is ready to serve .


            Serve hot with steamed rice , roti , parathas

            Note :

            The spice level could be increased by adding more green chilli

            Mutton Liver Fry | Aatu Eral Varuval | Mutton Liver Pepper Fry

            My mom makes this recipe when I was a kid . She tells that the liver has a lot of iron content in it and forces me to eat this . I did not like cook it because of its smell , but my mom suggest that adding the crushed pepper and cumin seeds powder covers the smell of the liver when it is cooked .             Eral Varuval made with peppers and Onions
            Mutton Liver Fry / Aatu Eral Varuval / Mutton Liver Pepper Fry


            Ingredients:

            • Mutton Liver Pieces ( Goat or Lamb ) -  250 gm , Chopped 
            • Onion - 2 no - chopped
            • Red Chillis - 4 no
            • Sesame Oil - 1 tbsp ( Any cooking oil could be used )
            • Turmeric powder - 1 pinch 
            • salt - to taste

            To Grind:

            • Cumin seeds - 2 tsp
            • Pepper Corns - 1 tsp


            Method:

            In a mixer grind together cumin seeds , and pepper corns in to a powder . Set aside .

            Heat oil in a kadai . Add the onions and whole red chilli and fry till the onion become translucent .


              Add the Livers , ground cumin , pepper corns powder , salt , turmeric powder and mix well .


              Cook till the oil separates out from the curry .


              Serve hot with Steamed rice


              Garnish with some cilantro leaves and serve hot .

              Baingan Bharta / Roasted Eggplant Masala / Sutta Katharikai thokku / சுட்ட கத்தரிக்காய் தொக்கு




              Ingredients:

              Eggplant - 1 no ,
              Onion - 2 no , chopped
              Tomato - 2 no chopped
              Ginger Garlic Paste - 2 tbsp
              Cumin Seeds - 1 tsp
              Cumin Seeds Powder - 1 tsp
              Coriander Seed powder - 1 tsp
              Red chilli powder - 1 tsp
              Garam Masala Powder - 1 tsp
              Turmeric Powder - 1/4 tsp
              Oil - 1 tbsp
              Green Chilli - 2 no , slit
              Salt - To taste





                Method:

                Brush the egg plant with oil . Preheat the oven to 500F or the max in your oven .Bake the eggplant for 10 minutes .


                Remove from the Oven.It will be like this .


                Start removing the skin of the eggplant .


                Take the flesh and mash it like this .Set Aside


                Heat oil in a Kadai . Add the cumin Seeds and allow it to crackle .


                Add the ginger garlic paste and fry for few seconds .


                Add the onions , tomatoes , green Chilli , Garam masala , red chilli powder , coriander powder , turmeric powder , salt and cook till the contents become soft .


                Now add the mashed eggplant and cook till the oil separates out from the masala .


                Serve hot with Roti
