BLUEBERRY PANCAKES | EASY PANCAKES RECIPES | BLUEBERRY RECIPES

I always wanted to try this pancakes for a long time . Luckily I found a few blueberries in farmers market last week . I saved few of them to make this beautiful pancakes . I must say that they turned out very well . My kids absolutely loved it . So now off to today's post Blueberry Pancakes Recipe .

Blueberry Pancakes Recipe


   Preparation Time : 15 minutes | Cooking Time : 5 minutes
  Recipe Category: Breakfast | Recipe Cuisine: American

 Ingredients:

  To make Pancake Mix :

  • All purpose flour - 1 1/2 cups
  • Baking powder - 1 1/2 tablespoon
  • Sugar - 1 1/2 tablespoon
  • Salt - 1/2 tsp
Wet ingredients : 
  • Eggs - 1 number
  • Blueberry - Few of them
  • Vanilla Extract - 1 teaspoon
  • Milk -  1 cup
  • Water - As needed
To Serve: 
  • Butter
  • Maple Syrup


 Blueberry Pancakes Recipe

 

Method :

  • Take a large mixing bowl . Add all the dry ingredients and mix . The dry ingredients are All purpose flour , Baking powder , Sugar and salt and mix well . Set aside . ( The ready made pan cake mix could also be used . It is available in the grocery store . )

  • Take the the egg  and Vanilla Extract in a bowl .


  • Add the milk and whisk the contents .


  • Transfer the wet ingredients to the dry ingredients .


  • Add water and mix well to a desired consistency without lumps . Do not beat the contents  Only fold the ingredients .  The batter should be thick and not too thin .  Add the blueberries and mix . 


  • Heat a Griddle . Spread some butter on the griddle . Pour a ladeful of batter on the griddle and allow it to cook till the bubbles are formed .


  • Flip to the other side once the bubbles are seen . Cook on both sides. Serve hot .
 
 

  • Serve the pancakes with Butter and Maple syrup . Done ! Yummy Blueberry Pancakes are ready to be served .

PUMPKIN PANCAKES | PUMPKIN RECIPES

This is Pumpkin season and there were lot of pumpkins all around .  I made pumpkin puree and wanted to make something with it , so  my mind flashed with pumpkin pancakes . Ingredients:

    Broccoli Carrot Sandwich

    I love sandwiches . They are really super easy to make with some veggies and few  slices of bread . Check out my Banana Bread sandwich and Grilled Vegetable sandwich recipes which i have posted earlier .


    Easy sandwich recipe made with carrots and Broccoli
    Broccoli Carrot Sandwich

    Ingredients:

    • Broccoli - Cut in to florets ( As needed )
    • Baby Carrot - 6 - 7 no ,  Chopped
    • Cream cheese - 1 tbsp
    • Salt - To taste
    • Pepper Powder - 1 tsp
    • Green Lettuce Leaf - 1 no
    • Bread - 2 slices
        Method:

        Take a bowl , add the broccoli florets , baby carrot , cream cheese , salt , pepper powder and mix well .


        Take the bread slice and spread the mixture on it .


        Cover it with a lettuce leaf .



        Place another slice of bread on the lettuce .


        Toast it on a griddle till slight golden brown in color .


        Slice it up in to triangles


        Serve warm with Ketchup .

        Vegetable sandwich recipe

        My daughters like sandwiches. After posting the Banana sandwich , i wanted to post another sandwich recipe . I had few Pinto bean patties left over , so i used those patties in this sandwich along with some veggies . Off to the recipe.

        Vegetable sandwich recipe



        Ingredients:

        • Bread slices - 2 no
        • Pinto bean patties - 2 no
        • Shredded onions - 1 tbsp
        • Tomato - chopped , 1 tbsp
        • Lettuce - shredded , 1 tbsp 
        • Butter - 1 tsp ( Vegans can substitute this with 1tsp of oil ) , Optional 

          Method:

          Preheat the sandwich maker if you are using it , Or it could be made in a tawa as well.Take the bread slices and apply Butter / oil to one side . This step could be skipped for a healthy version . Place one slice on the sandwich maker . Top it with the patties and add onion , tomato lettuce to it .


          Place another slice on top of this bread .




          Grill the bread with the sandwich maker , or it could be toasted in a tawa .


          Cook till the bread is toasted well .


          Serve hot with Ketchup

          Sponge Dosa / Poha Dosa / Awal Dosa / atukula attu / Rice Flakes Dosa

          Sponge Dosa / Poha Dosa / Awal Dosa / atukula attu 
          Ingredients:

          • Rice - 2 cups
          • Poha / Rice flakes / Awal - 1/2 cup
          • Salt - to taste
          • Butter Milk - 4 cups
          • Baking Soda - 1/4 tsp 

          Method: 

          In a mixing bowl add the rice and rice flakes .


          Add the thick butter milk , mix well .



          Cover with the lid . Set aside over-nite for for 8 - 10 hrs. Let it foam .


          Transfer it to a blender and grind it well .


          The batter will be thinner than the dosa batter . Add some salt and baking soda and mix well .


          Heat an iron tawa . Pour a ladeful of batter ,  and do nor spread it . It will spread automatically .


          Drizzle some oil around the edges . Cover with the lid and allow it to cook well .


          There will be holes formed on the dosa and it is spongy soft .


          Enjoy with chutney of your choice .

          Instant Tomato Dosa / Thakalli Dosa

          Ingredients:

          • Idly Rice / Boiled Rice - 1 cup
          • Urad dhal / Ulundu - 1/8 cup
          • Ripe tomatoes - 2 no , diced
          • Salt - to taste
          Method :

          Take the required rice and urad dhal in a bowl .


          Wash , Add water and soak it for 2 hours .


          Add the chopped tomatoes in a mixer and run it to a paste .


          Add in the soaked rice ,salt, urad dhal and make a puree of all the contents along with tomato puree .



          The batter can be used immedietly to make dosa . No need of fermentation for this dosa .Heat a tawa , Take a ladeful of batter and spread it .


          Drizzle some oil along the ends . Flip it over to the other side and cook .


          Serve hot .


          Enjoy with chutney of your choice .

          Poached Egg

          Poached Eggs
          Ingredients:

          Eggs
          Water
          Crushed pepper corns - To taste
          Salt - To taste
          Vinegar - 1/2 tsp

          Method:

          In a heavy Bottom pan bring the water to boil . Add some vinegar as it make egg to settle down quick .Insert a small vessel inside the boiling water in the center of the pan to hold the egg .


          After the water starts to boil vigorously ,  break the egg and pour it in the small vessel inside the pan .


           cover with the lid allow it to cook .


          Serve hot .


          Sprinkle some salt , crushed pepper corns and serve .


          My Kids absolutely loved this .
