Pumpkin Puree / Easy Method to Puree Pumpkin / Homemade Pumpkin Puree in Oven

Are you tired of cutting those hard pumpkins ? Here is the easy way to avoid cutting and chopping those big pumpkins .I still had 2 pumpkins left in my home after the fall season . I was wondering what to do with those , so i made this puree and freezed it and thought of using it later to make my recipes. So here goes the recipe to make Pumpkin Puree .



Ingredients:

Pumpkin
Water


    Method:

    Take the Pumpkin and slice it in to halves and scoop out the seeds .Pre heat the oven to 375F.


    Take a baking pan and fill it with 1/4 cup of water . Arrange the halved pumpkin in the pan . Cover the pan with Aluminum foil .


    Bake at 375F for an hour .


    Take out from the oven and  pierce a fork to check if they are tender and soft .





    Scoop out the pulp using a spoon .




    Transfer the pulp to a processor or a mixer and grind it .




    Take the pureed pumpkin from the processor and store it in a Ziploc box and refrigerate it or freeze it for longer use .





     Easy Puree is ready to use .

    Vegetable Stock Recipe / Vegetable Broth 





    Ingredients:

    Water
    Any Vegetables of your Choice ( I used , Cabbage + Onion + Potatoes + Peas + Corn ) , Diced

    Method :

    In a large heavy bottom pan , add the diced vegetables  and water .


    Heat the contents .


    Bring it to boil and cook in high flame for 10 minutes.Now simmer and cook for 45 minutes in low flame .


    Turn off . Filter in a strainer .


    Discard the vegetables . Store the stock in a container and refrigerate and use up to 4 days .



    Make soups using this stock

    Paneer Recipe / Cottage Cheese / பன்னீà®°்

    Ingredients:

    • Milk- 1/2 Gallon
    • Lemon Juice - 4 tsp
    • Crushed Pepper corns ( Optional )

    Paneer Recipe / Cottage Cheese / பன்னீà®°்
    Procedure:

    Bring the milk to boil.


    Add 4 tsp of lemon juice and give a continuous stir till the whey gets separated.


    The milk will be curdled now .


    Filter the whey using a muslin cloth .


    Tap the muslin cloth  to become flat, with the whey inside it.
    Place a heavy bottom pan with water on top of the  flattened muslin cloth.


    Set aside for an hour.
    Remove the fresh paneer from Muslin cloth and cut it in to small cubes using a knife.


    Add the crushed pepper corns if u are using it . This is a purely optional step .


    Transfer the cut pieces in to a zip lock bag and freeze it.



    Use this paneer to make,  Paneer Paratha  Mutter Paneer and Paneer Butter Masala ,

    Homemade Ghee / How to make Clarified Butter / How to make Ghee / Nei / நெய்

    We love to have Ghee with dal or any curries . Home made ghee has a nice aroma and it is very easy to make .Lets go on to the recipe now .

    Homemade Ghee / How to make Clarified Butter / How to make Ghee / Nei / நெய்

    Ingredients:
    • Unsalted butter- 500gms
    Method:

    In a heavy bottom vessel  and add butter.
    Melt it in medium flame.The whole process should be done in medium flame or low flame.

    When the butter starts boiling, the froth will be formed on the surface and the crackling sound will be heard.

    When the cracking sound stops, some brown spots may begin to form on the surface .


    Turn off the flame and allow the residue to settle in the bottom of the pan and let it cool.
    Filer it using a strainer and transfer it to a jar.

    It will solidify when cooled.
    It could be stored in room temperature and used as required for up to 3 months or refrigerate and use.

    Making Yougurt at home/Curd

    Curd

    Ingredients
    Milk - 1/2 liter(Any milk,1%, whole milk , 2% , or fat free)
    Curd - 2 tbsp(Home made ,If you don't have home made curd,you can use store dahi)

    Preparation:
    Boil milk without adding water.Let it cool a bit.
    When it is slightly warm,add 2tbsp curd and mix well.Close the lid and keep aside for 10-12 hours,OR
    Cover with lid and let it set for about 6-7 hrs in places where its over 35 degrees C. It normally takes about 5 hrs app to ferment.
    Now Dahi is ready
