MILAGU MUTTAI VARUVAL | PEPPER EGG ROAST RECIPE | EGG RECIPES

Pepper Egg Roast Or Milagu Muttai Varuval in Tamil is a quick and simple recipe made in a jiffy . The turmeric and Pepper used in this Recipe " Milagu Muttai " or Pepper Egg Roast  is very good for the treatment of common cold . My husband dhinesh had cold and I made this recipe and he felt much better . So now off to today's post Milagu Muttai Varuval or Pepper Egg Roast  recipe .

Pepper Egg Roast - Ingredients 

Preparation Time :10 minutes  | Cooking Time : 10 minutes
Recipe Category: sides | Recipe Cuisine: South Indian

  • Boiled Egg - 4 numbers , Slit in halves 
  • Turmeric Powder - 1 teaspoon
  • Oil - 2 teaspoon

To Grind :
  • Pepper Corns - 1 teaspoon
  • Garlic - 3 pods 
  • Fennel seeds - 1/2 teaspoon
  • Cumin Seeds - 1 teaspoon
  • Salt - To taste

    Method :

    • Grind all the contents under the " To Grind " table in to a coarse powder . Set aside .
    • Heat oil in a wok . Add the turmeric powder and let it stand for few seconds .


    • Add the ground powder to the oil and fry till the raw smell goes away .


    • Now add the slit boiled egg to the wok and cook them well till the Milagu or Pepper sticks to the Eggs .


    • Milagu Muttai or Pepper Egg roast is ready to be served .

    • Serve this Milagu Muttai or Pepper Egg with some Steamed rice and Spicy hot rasam . This recipe works like a charm for treating common cold .

    Egg Fried Rice | How to make fried Rice - Step by Step pictures

    Fried Rice is one of the easiest one pot meal . I at least make this once  a week because my kids absolutely love this . Check out my Vegetable Fried rice Recipe by clicking here  and the ever famous Paneer Fried rice by clicking here .

    Ingredients:

    • cooked Basmathi rice or any raw rice - 2 1/2 cups ( Click here for the recipe )
    • Vegetables (carrot ) - 1/4 cup, chopped , Optional
    • Capsicum - 1 number , diced
    • Garlic - 6pods, crushed
    • spring onions - 1 bunch ,chopped
    • Oil - 2 tbsp
    • Soy sauce - 1 tsp
    • Green Chilli Sauce - 1 tbsp
    • Ajina motto - 1 tsp
    • Pepper powder - 1 tsp
    • salt - to taste
    • Red chilly - 4 numbers , slit .
    • Egg - 2 numbers 

      Method:

      Cook the rice and Set aside . Click here for the recipe .

      In a large sauce pan . Heat some oil , add the whole red chilli and saute till they become brown in color . Add the crushed garlic pods and fry till the raw smell goes away .


      Add the vegetables ( I used only Carrot ) and half of the chopped spring onions and stir fry them . Add salt ,Ajinamotto  and stir.


      Now crackle the egg and add pepper .


      Mix them well . Add the diced Capsicum and stir fry them .


      Now add the cooked Rice , add the soya sauce and green chilli sauce and mix all together .


      Keep stirring the rice so that all the contents are mixed well . Now finally add the remaining spring onions and  toss them together with the rice .



      Yummy Fried rice is ready to Serve .

      Notes : 

      • Adding the Vegetable to the fried rice is purely optional . I added carrots to this recipe to give a nice color .
      • Peas and Green beans may be added too .
      • The vegetables should not be over cooked . They should be crunchy .
      • More eggs could also be added .

      Poached Egg

      Poached Eggs
      Ingredients:

      Eggs
      Water
      Crushed pepper corns - To taste
      Salt - To taste
      Vinegar - 1/2 tsp

      Method:

      In a heavy Bottom pan bring the water to boil . Add some vinegar as it make egg to settle down quick .Insert a small vessel inside the boiling water in the center of the pan to hold the egg .


      After the water starts to boil vigorously ,  break the egg and pour it in the small vessel inside the pan .


       cover with the lid allow it to cook .


      Serve hot .


      Sprinkle some salt , crushed pepper corns and serve .


      My Kids absolutely loved this .

      Cheese Omelet / Muttai Omelet

      Cheese Omelet / Muttai Omelet
      Ingredients:

      Egg - 1 no
      Pepper corns - 1/4 tsp , crushed
      Salt - to taste
      Cheese - 2 tsp
      Oil - 1 tsp

      Procedure:

      In a mixing bowl , add the egg , salt and crushed pepper corns and beat them .




      In a iron pan , heat oil , add the beaten egg  .


      Spread the Grated Cheese on top of the Egg.


      Let it cook on one side , and Flip it over to the other side and cook in a similar way.


      Serve hot .



      Enjoy this cheesy omelet with a cup of Coffee or Chai .

      Egg Gravy / Egg Chalna / Muttai Salna

      Egg Gravy / Egg Chalna / Muttai Salna
      Salna is a very famous dish served in the southern most part of Tamil Nadu. This is served along with Parotta.
      My husband who is from the south most part of tamil nadu is fond of  salna recipe.

      Ingredients:

      Egg  - 8 no
      Onion - 2 no , Chopped
      Tomato - 3 no , diced
      Green chilli - 3 no
      Cumin seeds - 2tsp
      Pepper corns - 2 tsp
      Fennel seeds - 2 tsp
      Garlic pods - 10 nos
      Ginger - 2.5' piece, chopped
      Grated Coconut - 1/2 cup
      Turmeric powder - 1/4 tsp
      Red Chilli powder - 1/4 tsp (Optional )
      Paprika powder - 1 tsp (Optional ) , Gives red color naturally
      Oil - 2 tbsp

      Procedure:

      Boil the Eggs and Slit them in to half but don't make them in to two halves.


       In a Shallow Pan, heat few drops of oil and fry the onions, tomatoes , Green chilli , ginger, garlic , cumin seeds , pepper corns, fennel seeds , and grated coconut .Cook till tomatoes and onion become soft.


      Allow this to cool down.Run this mixture in to a paste by adding little water.

      In a Shallow pan heat the remaining  oil , add 1/2 tsp of fennel seeds and Now add the ground paste to oil.
      Add little water and bring the contents to boil.


      Add the boiled eggs to the gravy , Cook till the oil separates out from the gravy.
      Serve hot with parotta , steamed rice , Idly , Dosa.

      Spicy Egg Masala / Muttai Thokku

      Ingredients:
      • Egg - 4 no
      • Onions - 2 no, chopped
      • Salt - to taste
      • Chili powder -2 tsp
      • Ginger Garlic Paste - 1 tbsp
      • Tomato - 1 no, chopped
      • Oil - 4 tsp
      • Green Chilli - 1 no 
      • Turmeric powder - 1/4 tsp
      Procedure:

      Bring the Egg to a boil .


      Slit the eggs , but not cut in to halves . In a kadai heat oil, add the  ginger garlic paste . Fry till the raw smell goes away .Now add the  chopped onions , and slit green chilli  and cook till onion becomes soft.


      Add the tomatoes and cook till they become mushy. Add the chiili powder , Turmeric powder and some salt and fry .

       

      Add the boiled egg to the masala and sprinkle little water .Let it cook in medium flame, till the oil separates on the top .


      Serve hot with steamed rice and roti .

      Egg Curry / Muttai Kolambu / à®®ுட்டை குà®´à®®்பு
      
       Ingredients:

      • Eggs  - 4 nos , Boile
      • Onion  - 1 no, Chopped
      • Tomato - 1 no chopped
      • oil - 2 tsp
      • Turmeric powder - a pinch
      • Hing - A pinch
      • Salt - As required
      • Chilli powder - 1 tsp
      • Mustard Seeds - 1 tsp
      To Grind:
      • Grated Coconut - 1/4 cup
      • Jeera / Cumin Seeds - 1/2 tsp

      Method:

      Bring the eggs to boil in  water.Then remove the shell and slit open the Eggs.Do not cut them in to halves.
      In a cooking pot, add a spoon of  oil add the mustard seeds and allow it to crackle . Add urad dal and fry for few seconds.


      Now add the onions and cook till they become soft .


      Add the tomatoes and cook till they become mushy.
      Now add the turmeric, chilli  powders, salt, and hing and cook till the raw smell goes away.


      Grind together the shredded coconut and jeera with little water to a paste in a mixer .


      Now transfer this ground paste to the cooking pot and bring it to boil.



      Add warter and Cook till the raw smell goes away. Now add the eggs .




      Cook till the oil seperates out from the curry .


      Serve hot with rice, chapatis, puri , idly or dosa  , Parotta.

      KOTHU ROTI | HOW TO MAKE KOTHU CHAPATI | MUTTAI KOTHU CHAPATHI

      Kothu Parotta  is a popular street food  in Tamil nadu . Kothu Roti or Kothu Chapati is a similar dish to Kothu parota that follows the same ingredients except the parottas are replaced by Chapati ( Roti ). So now off to Today's post Kothu Roti , Kothu Chapati .

      Kothu Roti Recipe , Kothu Chapati Recipe
      KOTHU ROTI | HOW TO MAKE KOTHU CHAPATI

      Kothu Roti ( Chapati )- Ingredients :

      Preparation Time : 10 minutes | Cooking Time : 15 minutes
      Recipe Category: Snack | Recipe Cuisine: Indian

      • Left over chapati ( Roti ) - 4 numbers
      • Onions - 1 number ,  chopped
      • Tomatoes - 1 number ,  chopped
      • Egg - 2 number 
      • Spring onions - a handful,  chopped
      • Ginger garlic paste - 1 teaspoon ( Click here for the recipe )
      • Garam Masala Powder - 1 tea spoon
      • Red chili powder - 1 tea spoon 
      • Oil - 2 teaspoon
      • Lemon juice - 2 to 3 drops
      • Salt - to taste

      Method :

      •  Take the Chapati or roti and chop them length wise . set aside .

      • In a kadai, add  oil, and add the chopped onions and cook till the onions become soft. 


      • Now add the tomatoes and cook till it become Mushy 





      • Add the Garam Masala Powder and Red chlli powder and some salt . 


      • Add the  eggs and stir till egg gets cooked.



      • Add the chapati , Roti to the mixture and toss them together with the masala . Squeeze 2 to 3 drops of lemon juice and mix . Throw in the spring onions and mix them well .


      • Kothu Roti ( Chapati ) is ready to Serve .


      • Serve this Kothu Roti (Chapati ) with some raitha .

      NOTES :

      • Any Mutton , chicken or Vegetable stew could be added to the kothu Roti and tossed along with them for few seconds .
