Peerkangai Poriyal | Ridge gourd fry | பீர்கங்காய் பொறியல் |
Ingredients:
- Peerkangai (Ridge gourd) - 1 no,Chopped
- Onion -1 no ,chopped
- Sambar powder - 1 tsp ( Red Chilli Powder Could also be used )
- Turmeric powder - 1 pinch
- Mustard seeds - 1/2 tsp
- Urad dal - 1 tsp
- Oil - 2 tsp
- Salt - to taste
- Grated coconut - 2 tsp(optional)
Preparation:
In a kadai, heat oil add mustard seeds allow to pop , add urad dal and fry for few seconds .Now add onions and stir and cook till it becomes soft.
Add Chopped ridge gourd, turmeric powder , sambar powder, salt and allow it to cook till the vegetable becomes soft. As it is getting cooked the vegetable itself oozes out the water .
Add the grated coconut and stir.
Serve hot with Steamed Rice .
