Vermicelli upma / Semiya upma / Vermicelli vegetable fry |
Vermicelli - 2 cups
Water - 3 cups
Chopped Vegetables - 1/2 cup ( Carrot + Beans + Peas )
Lime juice - 1/2 tsp
Ginger - 1 tsp ( Grated )
Oil - 1 tsp
Mustard seeds - 1/2 tsp
Urad dhal - 1/2 tsp
Green chilli - 2 no , slit
Turmeric powder - 1 pinch
Salt - to taste
Method:
Heat a drop of oil in a pan , and fry the Vermicelli until slight brown color. Set aside .
Heat oil in a shallow pan , add the mustard seeds and allow it to pop , add the urad dhal , green chilli , grated ginger and fry till the raw smell goes away .
Add the chopped vegetables , and salt and cook till the vegetables are crunchy.
Now add the water, turmeric powder , Lime juice and bring the contents to boil . Add the fried vermicelli to it and cook till the water evaporates.
Serve hot with Coconut Chutney .
