Pumpkin Stir Fry / மஞ்சள் பூசணி பொரியல்
It is Pumpkin time here , since the fall season has begun . My kids have plucked pumpkins from their field trip . I was wondering what to make with this , so thought of making this simple side dish . The hard part about these pumpkin is peeling the skin and chopping it down , but luckily my husband did that part for me . So now off to the recipe .

Ingredients:

Pumpkin - 1/2 pumpkin , chopped ( I used yellow pumpkin )
Turmeric powder - 1/2 tsp
Salt - to taste
MoongDhal - 2 tbsp

Tempering:

Oil - 1 tsp
Mustard seeds - 1/2 tsp
Urad dhal - 1/2 tsp
Cumin seeds - 1 tsp
Whole red chiili - 2 no , slit
Oil - 1 tsp

Method:

Add some water in a cooking pan , bring it to boil . Add the moong dhal and cook till it is 50 % done .


Now add the chopped pumpkin , turmeric powder , salt , sprinkle little water and cook till it become soft .

Heat oil , add the mustard seeds allow it to splutter . Add the urad dhal , cumin seeds , red chilli and fry for few seconds. Add onion and fry till ut become translucent .


Add the cooked pumpkin and moongdhal to it and fry for few more seconds .



Serve hot with Steamed Rice .

  1. I love pumpkins and I will try this recipe. Agree that it is hard to peel and cut :) My dad does the cutting and peeling for my mum too!
