String Hoppers / Home made Rice Noodles / Idiyappam / இடியப்பம் / Sevai Recipe

Ingredients:

  • Rice Flour / Idiyappam Flour  - 3 cups
  • Steaming Water - As needed
  • Salt - To taste

Method:

Bring the water to boil .Add salt to the steaming water.In a mixing bowl add rice flour and gradually add the water  to the flour by stirring with a ladle and mix without any lumps .


Make it in to a soft dough .

Place the dough on the string hopper press and squeeze it our in a hopper plate or it can be steamed in idly stand as well.

 Place the hopper plate stand , cover with the lid and Steam the hoppers for 5 to 7minutes. 


Serve hot with chicken Curry or vegetable kurma.


String hoppers are good for digestion and it is a very light food.

Yam stir fry / Suran fry / senaikilangu varuval

Ingredients:


  • Yam / Suran / senaikilangu  - 250 gms, chopped in to small cubes.
  • Onion - 1 no ,  chopped
  • Sambar powder OR Red chilli powder - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad da l-1 tsp
  • Oil - 2 tbsp
  • Salt - to taste

Preparation:

In a kadai, heat oil add mustard and urad dal and allow it to splutter . Now add onions and stir and cook till it becomes soft.

 

Add Chopped yam ,  sambar powder, salt and allow it to dry roast in oil.


Cook till they become golden brown in color.


Serve hot with rice and a curry of your choice .

Masala Puffed rice / Masala pori

Masala Puffed rice /  Masala pori

INGREDIENTS:
Puffed Rice – 2 cups
Turmeric powder – 1/2 tsp
Chilly powder – 1/2 tsp (optional)
Hing – 1 pinch
Salt – to taste
Oil – 2 tsp
Chopped vegetables-1 cup(I used only carrots)
Onion- 1 no , chopped

Preparation:

Heat oil in kadai.Add the chopped onions stir fry for 2 mts.It should be half cooked
Now add the grated carrots and fry for a minute.
Add the salt , hing ,turmeric powder and chilli powder and cook till the raw smell goes away.
Now add the puffed rice to it and stir well for about 30 sec.
The tasty masala puffed rice is ready to serve.
It is a excellent evening snack , a common street food in India.

Easy Pumpkin curry
 PUMPKIN CURRY | PUMPKIN DAL | PUMPKIN RECIPES


Ingredients:

  • Moong dal - 1 cup
  • Turmeric powder - 1/4 tea spoon
  • Hing - 1 pinch
  • Onions - 1 numbers ,  chopped
  • Tomatoes - 1 number , chopped
  • Yellow Pumpkin - chopped in cubes ( Few )
  • Sambhar powder - 2 teaspoon

Tempering :

  • Oil - 2 teaspoon
  • Mustard seeds -1 teaspoon
  • Urad dal - 1 teaspoon
  • Tamarind juice - 1 cup
  • Cumin seeds-1/2 teaspoon
  • Salt-to taste

 Method:

In a pressure cooker, add the moong dal,  onions ,tomatoes , Pumpkin, green chilli  , Turmeric powder  , Sambar powder , and water .


Mix the contents .


Cover them with the lid and pressure cook for 2 hisses .The pumpkin will be cooked well with the dal . Mash them well .




In a heavy bottom pan , heat oil, add mustard seeds allow it to pop , add urad dal, cumin seeds, and curry leaves. Add the  tamarind juice and bring the contents to a boil . Add the salt .



Transfer  the cooked dal and pumpkin to the boiling tamarind juice and mix well . Cook till the raw smell goes away . 



Serve hot .

Spinach Lentils Curry Recipe
Dal Palak / Palak keerai Paruppu masiyal   / Spinach Lentils Curry

Ingredients:


  • Toor dal - 1 cup
  • Tomatoes-1 no , chopped
  • Green chilli-2 nos
  •  Salt- to taste
  • Turmeric powder - 1 pinch
Tempering:

  • Oil- 2 tsp
  • Mustard seeds  - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Red chili - 2 no
  • Spinach -1/2 bunch chopped Or Frozen
  • Onion - 1 no , chopped 
  • Cumin seeds - 1 tsp
Spinach Lentils Curry
Dal Palak / Palak keerai Paruppu masiyal   / Spinach Lentils Curry



Preparation:

In a pressure cooker add the washed Toor dal, Turmeric Powder ,chopped tomatoes, slit green chilli, , water and pressure cook it for 10 mts till the dal is cooked well.Add salt and mix well .



In a Kadai, heat oil add the mustard seeds allow it to pop ,add the  urad dal ,cumin seeds, chopped onions ,slit red chilli and  cook till onions become soft.Add the chopped spinach leaves and stir for 2 minutes.


Transfer this to the cooked dal , add water to desired consistency  and bring the contents to a boil .


Serve hot with steamed rice  rice,and flat breads .

Raw Banana stir fry / Plantain poriyal / Valakkai Poriyal / வாà®´ைக்காய் பொà®±ியல்

Ingredients:

  • Raw Banana / Plantain - 1 no , chopped in to cubes 
  • Chopped Onion - 1 no, chopped
  • Sambar powder - 2 tsp
  • Turmeric powder - 1 pinch
  • Mustard seeds - 1/2 tsp
  • Urad dal- 1 tsp
  • Oil - 1 tbsp
  • Salt - to taste

Preparation:

Add the cubed plantain in water , so that it does not turn black colour .



In a kadai, heat oil add mustard seeds  and urad dal and allow it to splutter
Now add onions and stir and cook till it becomes soft.

Add Chopped Plantain , turmeric, and sambar powder, salt and sprinkle little water and toss .


Cook till the plantain become soft .Allow it to become dry and roast it till it turns golden brown in color .

Serve hot with steamed rice and a curry of your choice .
