Pavakkai Poriyal | Bitter gourd fry | Karela Fry


Easy diabetic friendly recipe
Pavakkai Recipe | Bitter gourd fry | Pavakkai poriyal


Ingredients:

  • Bitter gourd - 3 numbers ,Chopped
  • Onion -  1 numbers , chopped
  • Oil- 2 table spoon
  • Mustard seeds - 1/4 tea spoon
  • Urad dal - 1/2 tea spoon
  • Salt - to taste
  • Sambar powder - 1 tea spoon ( Red Chilli Powder Can also be used )
  • Turmeric powder - 1 pinch
  • Curd - 1/4  cup, beaten  ( Click here for the recipe )

Method:

In a heavy bottom pan heat one table spoon  oil, add the mustard seeds and allow it to crackle.Now add urad dal and fry till it turns brown.Add the chopped onions and cook till it becomes soft.

Add the chopped bitter-gourd ( Pavakkai ) , salt, sambar powder,turmeric powder and beaten curd and  mix .


Mix well and allow it to cook till it becomes soft .



Now put it in medium flame and add one table spoon  of oil and allow it to get roasted in oil. Cook till it turns golden brown color .

Serve hot with rice after it turns brown in colour.

Notes :

  • Yogurt could be substituted with water , if you do not want to use yogurt .

Sundakkai Vatha Kulambu | Sundakkai Recipes

Sundakkai Vatha Kulambu
Vathal kolumbu /  Turkey Berry Curry / Sudakkai Kulambu

Turkey berry / Sundakkai has amazing health benefits .It helps in controlling diabetics . 

Ingredients:

  • Turkey berry / Sundakkai - 1/4 cup
  • Onion -1 no , chopped
  • Tamarind juice - 1/2 cup
  • Sambhar powder - 2 tsp ( Red Chilli Powder could be used )
  • Turmeric powder - 1 pinch
  • Oil - 2 tsp
  • Methi seeds / Fenugreek Seeds -1/2 tsp
  • Mustard seeds-1/2 tsp
  • Salt - to taste

Preparation:
In a Kadai, heat oil, add the mustard seeds and allow it to pop.Now add  methi seeds and stir for few seconds .Now add the sun dried vegetables and cook till it is fried well.Add onions , tomatoes  and cook till it becomes soft.

Add the sambhar powder,salt and turmeric powder and stir for a minute.

Add the tamarind juice and bring the mixture to boil.

Cook till the oil separates out of the curry.



Serve hot with Steam rice and a side dish as per your choice to make it a perfect lunch menu .

Ingredients:


  • Chicken - 250 gms , cleaned and chopped
  • Onion - 1 no , chopped
  • Turmeric powder - 1 tsp
  • Salt - To taste
  • Oil - 1 tbsp
To Roast and Grind:

  • Grated coconut - 1/4 cup
  • Whole red chilli - 6 no
  • Coriander Seeds - 3 tsp
  • Pepper Corns - 1 tsp
  • Cumin Seeds - 2 tsp

Method: 

Dry Roast all the contents  under the "TO Roast and grind table" in a hot tawa for few seconds and grind it to a paste by adding little water . Set aside .




Add the turmeric Powder to Cleaned chicken , Mix well . Set aside for 30 minutes .



Heat oil in a heavy pan , add the diced onion and cook till it become soft .




Throw in the chicken . Add salt and mix .





Add the ground puree from the mixer ,  little water and bring the contents to a boil . Allow them to boil for 10 minutes in open pan , so that the raw masala smell goes away .




Cover the lid and cook for few minutes till the oil seperates out from the curry and that the chicken is cooked tender .



Serve hot with steamed rice , Idly, dosai or roti and parathas

Sambar / How to make Sambar / Indian Lentil soup / DrumSticks Sambar / à®®ுà®°ுà®™்கைகாய் சாà®®்பாà®°்

Sambar is a very popular and a traditional dish in South India . It is served along with Steamed Rice , or Idly and Dosa. It is made using the pigeon peas / Toor dhal . It is can also be called as Lentil Soup .

Ingredients:

Preparation Time : 10 minutes  | Cooking Time : 30 minutes | Serves : 4
Recipe Category: Main Dish | Recipe Cuisine: South Indian

To Cook Dal :
  • Toor dal - 1 cup
  • Turmeric powder - 1/4 tsp
  • Hing - 1 pinch
To Temper :

  • Oil - 2 tsp
  • Mustard seeds - 1 tsp
  • Urad dal -1 tsp
  • Methi seeds - 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Red chilli - 2 no
  • Onions - 1 no ,  diced
  • Tomatoes - 1 no ,  chopped
  • Tamarind juice - 1/4 cup
  • Any vegetable  - chopped ( I used Drum Sticks )
  • Sambar powder - 2 tsp

Preparation:
In a pressure cooker, add the toor dhal,some water,turmeric powder, hing and pressure cook for 3 whistles.Mash it up . Set aside . ( I added few chopped tomatoes , but this is optional )

In a kadai, heat oil, add mustard seeds, urad dal, methi seeds, cumin seeds, red chillies, and fry for few seconds .


Now add the onions  cook till the onions become translucent.Add tomatoes and cook till soft .
Now add the chopped vegetables , sambhar powder, salt and tamarind juice and allow the contents  to boil .


Transfer these contents to the cooked toor dal and mix well.


Check for salt and allow it to cook in pressure cooker for 1 whistle or cook in open pan for 15 -20 minutes till the vegetables are cooked.


Serve hot with Steamed Rice or Ven pongal , Idly , Dosa .

Vegetable fried rice


Ingredients:
  • cooked Basmathi rice or any raw rice - 2 1/2 cups
  • Vegetables (carrot+beans+ capsicum) - 1 cup, chopped
  • Garlic - 6pods, cut in to very small pieces
  • spring onions - 1 bunch ,chopped
  • Oil - 2 tbsp
  • Sugar - 1/2 tsp
  • Soy sauce - 1 tsp
  • Green Chilli Sauce - 1 tbsp
  • Ajina motto - 1 tsp
  • Pepper powder - 1 tsp
  • salt - to taste
  • Red chilly - 4 nos

Vegetable Fried Rice



Preparation:
In a kadai , heat 2 tsp oil, add the whole red chilli and fry it in low flame till the color of red chilli, turns brown.Filter the oil and keep it aside .

In another kadai, add 2 tsp oil, add minced garlic and fry till the raw smell goes away.

Now add the chopped vegetables, salt,pepper powder and stir . Cook till the vegetables become crunchy .
.
Now add the cooked rice to the vegetables , add soy sauce,Chilli sauce , ajina motto,sugar and also add the filtered oil , toss the contents and cook for 5 min in medium flame.Check for salt.

Add the spring onions , and turn off the flame.



Serve hot with chilli sauce and tomato sauce


Enjoy this very easy Fried rice on a hectic work day .

KOTHU ROTI | HOW TO MAKE KOTHU CHAPATI | MUTTAI KOTHU CHAPATHI

Kothu Parotta  is a popular street food  in Tamil nadu . Kothu Roti or Kothu Chapati is a similar dish to Kothu parota that follows the same ingredients except the parottas are replaced by Chapati ( Roti ). So now off to Today's post Kothu Roti , Kothu Chapati .

KOTHU ROTI | HOW TO MAKE KOTHU CHAPATI

Kothu Roti ( Chapati )- Ingredients :

Preparation Time : 10 minutes | Cooking Time : 15 minutes
Recipe Category: Snack | Recipe Cuisine: Indian

  • Left over chapati ( Roti ) - 4 numbers
  • Onions - 1 number ,  chopped
  • Tomatoes - 1 number ,  chopped
  • Egg - 2 number 
  • Spring onions - a handful,  chopped
  • Ginger garlic paste - 1 teaspoon ( Click here for the recipe )
  • Garam Masala Powder - 1 tea spoon
  • Red chili powder - 1 tea spoon 
  • Oil - 2 teaspoon
  • Lemon juice - 2 to 3 drops
  • Salt - to taste

Method :

  •  Take the Chapati or roti and chop them length wise . set aside .

  • In a kadai, add  oil, and add the chopped onions and cook till the onions become soft. 


  • Now add the tomatoes and cook till it become Mushy 





  • Add the Garam Masala Powder and Red chlli powder and some salt . 


  • Add the  eggs and stir till egg gets cooked.



  • Add the chapati , Roti to the mixture and toss them together with the masala . Squeeze 2 to 3 drops of lemon juice and mix . Throw in the spring onions and mix them well .


  • Kothu Roti ( Chapati ) is ready to Serve .


  • Serve this Kothu Roti (Chapati ) with some raitha .

NOTES :

  • Any Mutton , chicken or Vegetable stew could be added to the kothu Roti and tossed along with them for few seconds .
