KADAI CHICKEN RECIPE | CAPSICUM CHICKEN CURRY | CHICKEN RECIPES

 My husband is an ardent fan of Chicken recipes , Check out all the chicken recipes in my blog here . This recipe combines the fresh bell peppers in the chicken . It goes well with Naan Recipe . Check out my similar Veg recipe Kadai Paneer here .  We generally order Kadai chicken in the restaurants and this is my first attempt to make Kadai chicken at home  and it tasted really good . So now off to the recipe  now .

Capsicum chicken curry Recipe ( Kadai Chicken )
KADAI CHICKEN RECIPE | CAPSICUM CHICKEN CURRY | CHICKEN RECIPES


Ingredients:

  • Chicken - 500 grams , Cleaned , skin out and cut in small pieces 
  • Capsicum | Bell Pepper - 2 numbers , Diced
  • Onion - 1 number , chopped
  • Tomato - 2 number, Pureed  
  • Salt - to taste
  • Turmeric powder - 1 /2 teaspoon
  • Oil - 2 tablespoon
  • Whole red chilli - 2 numbers , slit
  • Cumin sees - 1 tea spoon

To Roast and  Grind :

  • Whole Red Chilli - 12 numbers
  • Coriander seeds - 6 teaspoon
  • Ginger - 25 gms
  • Garlic - 25 grams
  • Kasthoori Methi Leaves ( Fenugreek leaves ) - 1 teaspoon 
  • Cumin seeds - 2 teaspoon
  • Pepper corns - 1 teaspoon

Method:


Take a wok and heat it . Add the whole red chilli , coriander seeds , Cumin seeds , Pepper corns , Ginger , garlic , Kasthoori Methi powder (  Dried Fenugreek leaves ) and dry roast them .


Grind them in to a powder in a mixer grinder . Set aside .



Heat a Kadai or Wok  and add the oil . Add the cumin seeds and allow it  to splutter , and now add the red chillis and fry for few seconds . Add the chopped onions and cook till they become soft .



Add the Chicken pieces , the ground powder , salt and turmeric powder . Mix well .


Add  some water and bring the contents to a boil . Cook till the raw masala  smell goes away


Now add the pureed tomatoes to the chicken gravy . Mix well .


Cook till oil separates out from the gravy .Now add the diced capsicum and cook till the capsicum is crunchy. ( Do not over cook the capsicum )


Mix the contents well . Serve hot .


This dish goes well with Naan  Recipe and also with flat breads , parathas  and steamed Rice . Yummy Kadai Chicken is ready to serve !

Note :


  • The capsicum could be roasted in oil for few seconds till they become crunchy , and added to the gravy .

Spinach Potato fry | கீரை உருளைகிழங்கு பொறியல் | Easy Side dish

Spinach and potaotes cooked and tempered with spices
Spinach Potato fry / Keerai Urulaikiangu poriyal / Palak Potato Masala / கீரை உருளைகிழங்கு பொறியல்


Ingredients:

  • Boiled potatoes - 3 nos , Diced
  • Spinach - 1/2 bunch , chopped
  • Tomato - 1 no , chopped
  • Oil - 2 tsp
  • Onion -1 no chopped
  • Green Chilli -  2 no , slit ( I used Jalapeno Peppers )
  • Red Chilli  powder -1 tsp
  • Turmeric powder -1/4 tsp
  • Hing -1 pinch
  • Salt - to taste


Method:

In a heavy bottom pan , add oil,  add onions  and green chilli and fry till the onions become translucent .


Throw in the tomato and cook till mushy and now add the red chilli powder, salt  and turmeric powder to it and mix well . Cook till the masala smell goes away .


Now add the boiled potatoes and mix with the masala . Cook for few minutes till the potatoes are well coated with the masala .



Add the chopped spinach and cook till the leaves become tender .


Serve hot .

I served this with poori . This goes well with Steamed Rice , Roti , Parathas as well .

CAULIFLOWER PATTANI PORIYAL | CAULIFLOWER PEAS PORIYAL , HOW TO MAKE PORIYAL RECIPE

Cauliflower Pattani AKA peas poriyal is a simple stir fry recipe that pairs well with rice and a curry of your choice . Cauliflower peas aka pattani combo goes well with each other . So now off to today;s post of Cauliflower Pattani Poriyal aka cauliflower Peas poriyal .

Cauliflower Peas Fry - Ingredients

Preparation Time :10 minutes  | Cooking Time : 15 minutes
Recipe Category: Sides  | Recipe Cuisine: South Indian
 
  • Peas - 1/2 cup (soaked overnight or the canned peas or the frozen peas)
  • Cauliflower - 1 1/2  cup, cut in to florets
  • Onion -1 number ,  chopped
  • Sambar powder - 1 teaspoon ( Click here for the recipe )
  • Turmeric powder - 1 pinch
  • Mustard seeds - 1/2 teaspoon
  • Urad dal - 1 teaspoon
  • Oil - 2 teaspoon
  • Salt - to taste

Method :

  • In a Wok, heat oil.Add the mustard seeds and allow it to splutter.Add urad dal and stir for a minute .
  • Now add the onions and cook till it becomes soft.Add the cut cauliflower florets and fry for few seconds .
 
  • Now  add the sambar powder,turmeric powder and salt and stir till raw smell goes away. Sprinkle some water and bring the contents to boil . 

 
 
  • Add the  peas and stir and cook till the cauliflower and Peas become soft .


  • After it is cooked, turn the stove to medium flame and dry roast till it becomes brown in color.Done !! cauliflower pattani poriyal is ready .

  • Serve the cauliflower pattani poriyal aka Cauliflower peas poriyal with   Steamed Rice and curry of your choice .

BHINDI FRY | OKRA FRIES | LOW FAT RECIPES | OKRA 65

Low fat Bindi Or Okra Fry recipe
BHINDI FRY | OKRA FRIES |  LOW FAT RECIPES

Ingredients:

  • Okra - 10 numbers, slit in to halves
  • Gram flour | Besan Flour - 1/2 tea spoon
  • Salt-to taste
  • Red chili powder - 2tea spoon
  • Coriander powder-1 tea spoon
  • Oil - 1 tablespoon , For Frying

Method:

Wash the okra in water . Pat dry using a towel . Now cut them in to halves . This helps to reduce the slime in okra .  In a bowl, add the Okra, gram  flour,red chili powder, coriander powder, salt and mix well .



 In a shallow frying pan, heat oil. Drop the marinated Okra and fry till it turns brown in colour.




Cook till it turns brown in color .


Yummy Okra Fries are ready to serve.

Note:
  • The okra could be baked at 375 F in the oven till it becomes brown in color without adding oil as per choice.
  • The okra could also be deep fried in oil till it becomes crisp as per choice .
  • The marinated Okra could be set aside for 1 hour before frying in oil .
