CHICKEN CURRY IN A HURRY - NO COCONUT METHOD

Chicken Curry in a hurry is a simple Chicken Curry recipe made in a jiffy since no Grinding is required for the recipe .  This recipe calls for very few and available ingredients from our Kitchen pantry . The Chicken curry in a hurry is made in the pressure cooker and it could be made in 20 minutes . So now off to today's post Chicken Curry in a Hurry .

Chicken Curry in a Hurry - Ingredients

Preparation Time :10 minutes  | Cooking Time : 20 minutes
Recipe Category:
Curry  | Recipe Cuisine Indian 
  •  Chicken - 500 Grams ,skin out ,  Cleaned and chopped
  •  Onion - 350 grams , Chopped finely
  •  Tomato - 250 Grams , finely diced
  •  Ginger Garlic Paste - 1 tablespoon ( Click here for the recipe )
  •  Oil - 2 teaspoon
  •  Curry Powder - 1 tablespoon ( Click here for the recipe )
  • Turmeric powder - 1/4 teaspoon
  •  Pepper powder - 1 teaspoon ( Optional )
  •  Cilantro leaves - Few , chopped ( optional )
  •  Water - 2 cups
  •  salt - to taste

    Method :

    • Heat oil in a pressure cooker . Add the finely chopped onions and cook till they become translucent .


    • Now add the chopped Tomatoes and cook till they become soft .






    • Add the Chicken pieces , Curry Powder , Turmeric powder , salt and mix .



    • Now add the 2 cups of water and bring the contents to a boil . Add the pepper powder and cilantro leaves and mix .


    • Cover with the lid and pressure cook the contents for 2 hisses .


    • Remove the lid of the pressure cooker  and the oil separates out on the top of the chicken curry .


    • Chicken curry in a Hurry is ready to serve . 




    Notes :

    • The curry powder could be replaced by using Red chilli powder and Coriander powder in 1: 1 ratio .
    • Any Store bought curry powder could be used to make this curry .
    • The addition of pepper powder and cilantro leaves could be optional .

    MUSHROOM TIKKA MASALA | MUSHROOM RECIPES

    Mushroom Tikka recipe is a delicious recipe that pairs well with Naan and  steamed rice  . Recently we started including Mushrooms in our diet and this recipe is one of my kids favorite recipe as well . So now off to today's post Mushroom Tikka Masala recipe .

    Mushroom Tikka Masala -Ingredients

    Preparation Time :1 hour | Cooking Time : 30 minutes
    Recipe Category:

    • Oil - 2 teaspoon
    • Cumin seeds - 1 teaspoon
    • Onion - 2 number , pureed
    • Tomato - 2 number , pureed
    • Ginger Garlic paste -1 tablespoon , ( Click here for the recipe )
    • Red chilli powder - 1 teaspoon
    • Coriander powder - 1 teaspoon
    • Garam masala powder - 1 teaspoon
    • Yogurt - 1 teaspoon ( Click here for the recipe )
    • Fresh cream - 1 tablespoon ( Click here for the recipe )
    • Butter - 1  teaspoon
    • Bell Peppers - 1 number , chopped
    • Salt - to taste 

    To Marinate :

    • Mushroom - 1 packet , cleaned and chopped (  Click here for the recipe )
    • Ginger garlic paste - 1 teaspoon ( Click here for the recipe )
    • Red chilli powder - 1 teaspoon
    • salt - to taste
    • yogurt - 1 teaspoon ( Click here for the recipe )

      Method :

      HOW TO CLEAN AND CUT MUSHROOMS




      • Take one tea spoon  oil in a wok . Add the marinated mushroom and fry till they become brown in color . Remove and set aside .


      • Add the bell peppers and fry till they become slightly roasted . Remove and set aside .




      • Take the remaining oil in a wok . Add the cumin seeds and allow them to sputter .

      • Add the onion paste and fry till they become golden in color .


      • Add the tomato puree , red chilli powder , coriander powder , garam masala powder , ginger garlic paste , little water , salt and mix . cook till the oil separates out from gravy . Add yogurt and mix .




      • Now add the bell peppers and mushroom and mix the contents well .


      • Mushroom Tikka masala is ready to serve .

      TAWA PULAO RECIPE | HOW TO MAKE TAWA PULAO

      Tawa pulao , as the name suggest is a pulao made on the tawa , with some left over rice and few veggies along with spice powders . Tawa pulao is a mumbai based street food . This tawa pulao a quick fix for a instant one pot meal , so now off to today's post Tawa Pulao recipe .

      TAWA PULAO RECIPE | HOW TO MAKE TAWA PULAO


       Tawa Pulao - Ingredients:

      Preparation Time :10 minutes  | Cooking Time : 15 minutes
      Recipe Category:
      Main dish  | Recipe Cuisine Indian 


      • Cooked Rice - 2 Cups ( Click here for the recipe )
      • Onion - 1 number , sliced
      • Tomato - 1 number , chopped
      • Mixed Vegetables - 1 cup , chopped ( I used Carrot + Bean + Boiled Potato )
      • Ginger Garlic Paste - 1 tablespoon ( Click here for the recipe )
      • Pav Baji Masala Powder - 1 teaspoon
      • Red Chilli Powder - 1 teaspoon
      • Turmeric Powder - 1/4 teaspoon
      • Salt - To Taste
      • Oil - 2 teaspoon
      • Cumin seeds - 1 teaspoon

        Method :

        • Heat oil in a tawa or Wok . Add the cumin seeds and allow them to crackle  .


        • Add the onions and fry till they become translucent .




        • Now add the Chopped Tomatoes and cook till they become mushy .


        • Add the chopped Vegetables ( Carrot , Beans ) followed by pav baji Masala powder , Turmeric powder,  salt and Red chilli powder .


        • Cook till the veggies are done . Now add the boiled potatoes and Mix .




        • Done ! Tawa Pualo is ready to be served .


        • Enjoy the Tawa pulao with some Raitha .

        Notes :

        The original recipe calls for the addition of Bell peppers , So add capsicum when making this pulao

        PINEAPPLE KESARI | HOW TO MAKE KESARI RECIPE | INDIAN SWEETS RECIPES

        Pineapple Kesari is an Indian dessert made with Sooji ( Rava , Semolina ) , ghee and some Pineapple Puree . This Kesari has  the  flavor of Pineapple that makes it more delicious  . I have made this pineapple Kesari Similar to my Rava Kesari Recipe . My kids absolutely loved this Pineapple Kesari . So now off to today's post Pineapple Kesari Recipe .

        Pineapple Kesari - Ingredients

        Preparation Time :10 minutes  | Cooking Time : 15 minutes
        Recipe Category:
        Dessert  | Recipe Cuisine: South Indian
        • Semolina / Rava / Sooji - 3/4 cup
        • Water - 1 1/4 cups
        • Fresh Pineapple Puree - 1/4 cup
        • Sugar -  3/4 cup
        • Butter - 1stick
        • Yellow Food Color - 1 pinch( Optional )
        •  




          Method :

          • Take the chopped Pineapple slices in a blender . Puree them in to a smooth paste without adding water . 

          • Melt the butter in a wok . 
          • Fry the semolina ( rava ) in the butter till the raw smell goes away .
          • In a shallow pan add 1 1/4 cups of water  , Pineapple Puree , Yellow food color and bring the contents to a rapid boil.

          •  Transfer the boiling Contents  to the fried rava and mix that no lumps are formed and make sure that the rava / Semolina is cooked.

          • Add the sugar and mix till the sugar gets melted.

          •  Turn off the stove  before the kesari gets thickened . The kesari should not be too watery nor too thick . Serve Pineapple Kesari warm. 

          • This is a wonderful and a easy dessert , One of my kids Favorite dish and it could be prepared in 15 minutes. Yummy Pineapple Kesari is ready to serve . 
          Notes :

          • Adding food color to kesari is optional .
          • Butter can be replaced by ghee or Oil .
          • Fried cashew can be added to the kesari when serving .

          SWEET CORN VADA RECIPE | HOW TO MAKE SWEET CORN VADAI RECIPE

          Sweet Corn Vadai is a simple , easy and quick recipe made with Very few ingredients from your kitchen pantry . My kids loved this sweet corn vadai . I made this Sweet cornVadai in a similar pattern to Masal vadai . So now off to today's post Sweet Corn Vadai Recipe .

          Sweet Corn Vadai - Ingredients

          Preparation Time :5 minutes  | Cooking Time : 15 minutes
          Recipe Category: Sides  | Recipe Cuisine: South Indian 
           
          • Sweet Corn - 2 numbers , kernels removed
          • Green Chilli - 2 numbers
          • Garlic pods - 2 number
          • Ginger - 1/2 ' piece , chopped
          • Fennel seeds - 1/2 teaspoon
          • Roasted channa Dal powder - 1 tablespoon ( pottukadalai Powder  , Daliya powder )
          • Salt - To taste 
          • Oil - For Frying

            Method :

            • Remove the Kernels from the sweet Corn .



            • Take a food processor , add the green chilli , garlic pods , ginger and fennel seeds . Crush them,


            • Add the corn Kernels , salt  to them and run them coarsely by sprinkling water if needed .

             
            • Transfer the ground Sweet corn paste to a bowl . Add the roasted channa dal powder and mix well .


            • Heat oil for frying . Make small patties of the coarse sweet corn paste and drop them in hot oil .


            • Fry till they become golden brown color .


            • Sweet Corn Vada is ready to serve . Serve the sweet corn vada with ketchup . Enjoy this sweet corn Vada with some Juice or a Chai ( Tea ) in the evening .
